    Eggplant cut in thin slices, breaded and fried. Place a layer in a baking dish. Then cover with tomato sauce and top with lots of shredded mozzarella and parmesan cheese. Then add a second layer - repeat. Bake for about a half hour. It's an Italian dish - also a good vegetarian dish. Serve with pasta
