    The Fruitcake Thread

    Life is like a fruit cake --- it wouldn't be complete without a few nuts!

    Okay, now that that is settled, those who use their fruit cakes as doorstops need not post here. :P

    I have two favorite fruit cakes:



    GRANDMOTHER'S REFRIGERATED FRUIT CAKE
    8 oz. maraschino cherries
    1 lb. box dark raisins
    1 qt. chopped pecans
    1 lb. crushed graham crackers
    1 lb. marshmallows
    1/2 lb. butter
    Juice from cherries
    Mix together cherries, raisins, pecans, and graham crackers. Melt marshmallows, butter, and cherry juice in double boiler and pour over first mixture. Roll in waxed paper or foil. Store in refrigerator.

    That sounds good, and easy enough for me to make!
    My mother's recipe made a huge amount. She used to make it in Wedding cake pans. I wouldn't even attempt that even if I did have the kitchen space.

    I actually lost my recipe for ice box fruit cake. I think this is more like it(if you cut this recipe in half) because I don't remember using maraschino cherries:

    ICE BOX FRUIT CAKE
    from COOKS.COM

    1 Box graham crackers
    1 can eagle brand milk
    1 box raisins
    1 qt. walnuts (chopped)
    25 Marshmallows
    2 sm. or 1 large container candied cherries (chopped)
    2 sm. or 1 large container candied pineapple (chopped)

    Place graham crackers into a gallon size freezer bag and use roller to
    crush into crumbs. Mix in bowl with raisins, walnuts, fruit and mix. Melt
    marshmallows in eagle brand milk, in double boiler or microwave oven for
    2 minutes until melted. Pour mix over your graham cracker mixture. Mix
    well (this will take sometime). Place in loaf pans lined with wax paper,
    (pack well).
    Leave in refrigerator for at least one week. Then slice thinly. Makes 2 loaf
    pans.

    Hints: 1. You will also need to butter your hands so mixture does not stick
    to your hands. 2. Strong hands are needed when mixing all ingredients
    together.

    Thanks for sharing recipes. I love fruitcakes especially on Christmas time. Fruitcakes with an assortment of nuts and fruits can be a delicious holiday treat to eat.

    I make the light fruitcake recipe, half recipe smaller cake, recipe Tess Mallos from her cookbook Cooking in Colour. I bought the cookbook long ago in 1978.
