    Scallopped Corn

    SCALLOPED CORN

    1 beaten egg
    1 cup milk
    1 cup coarsely crushed saltine crackers (22 crackers)
    3/4 tsp salt
    Dash pepoper
    1 17 ounce can cream-style corn
    1/4 cup finely chopped onion
    3 tablespoons chopped pimento
    1 tablespoon butter, melted

    Combine egg, milk, 2/3 cup cracker crumbs, salt and pepper. Stir in corn, onion and pimento; mix well. Turn into one quart casserole dish. Stir melted butter with remaining cracker crumbs and sprinkle atop corn mixture. Bake at 350 degrees for 65 to 70 minutes. Makes 6 servings

    I printed this because I need to try it. There's obviously something to it if it's the first thing to go every year!!
