    :gingerbread: Homemade Caramel COrn

    8 cups popped popcorn (I use microwave)
    2 cups packed brown sugar
    1 cup butter ( not margarine)
    1/2 cup light corn syrup (Karo)
    1 tsp salt
    1 tsp baking soda
    1 cup peanuts (optional)

    Preheat oven to 200 degrees F.
    In a saucepan heat butter, sugar, corn syrupand salt.
    Stir occassionally, when mixture comes to a full boil, cook for 5 minutes (stirring constantly to keep from burning) Remove from heat and
    stir in baking soda.
    Pour caramel over popcorn and mix until evenly coated.
    Bake for 1 hour stirring every 15 minutes.

    It is really good Mom makes it every year!

    Thanks for the recipe, never made caramel corn and it sounds like a recipe for all occasions!
