    I just wrote the recipe out from scratch and then my daughter leaned on the mouse and closed the tab!! Ah, frustrating to say the least!

    You'll need:

    175g caster sugar
    A large egg (or two medium/small eggs)
    85g butter
    75ml milk
    125g self-raising flour (or plain flour and use a raising powder)
    About a tablespoon of ground cinnamon
    A large cooking apple, peeled and thinly sliced.

    Start by peeling the apple and slicing into roughly mm thick slices. Pop them to one side and measure out your caster sugar. Pre-heat your oven to 220c and line a rectangle baking tin (like a small bread tin) with greaseproof paper.

    Put your sugar and egg into a mixing bowl and use and electric whisk to mix them for 5 minutes (or until really, really thick - like mousse). If you don't have an electric whisk, I'm afraid you'll be there for a very long time!

    Melt the butter in a saucepan with the milk and then add to the sugar and egg. Add a generous spinkling of cinnamon and then whisk together. Measure out your flour and then sift into the mixture (along with baking powder if you're not using self-raising). Gently whisk together until there are no lumps.

    Pour half of your mixture into your prepared tin and then add half of the apple slices to the top of that. Sprinkle with a little caster sugar and cinnamon. Add the rest of your mixture, and lay the rest of your apple slices to the top of your cake mix. Add one final sprinkle of sugar and cinnamon and put your cake into your pre-heated oven. Bake for 15 minutes at 220c and then turn the temperature of your oven down to 180c and bake for a further 20 minutes.

    Use a knife to check that the cake is cooked throughout. Once your cake is finished baking, remove the cake in the greaseproof paper and stand on a cooling rack until cool. Once your cake has cooled down, gently peel away the greaseproof paper, using a knife if neccessary to separate the cake from the paper. Slide the cake onto your plate and it's ready to cut and serve
