My version is very high fat as well (but it's awsome!). I'm thinking of breaking tradition and making a punch I made one year instead. It had cloves and oranges and I think cranberry juice. It was still Christmas tasting, but not nearly as caloric.
I think it would be difficult to nake a good low-fat eggnog as the consistency is based on the fat!

I only have a handful of glasses of egg nog every year anyway. Therefore, I don't mind the fat content. I understand if someone drinks a lot of it, that they'd want to reduce the fat intake. Just the sound of "lowfat egg nog" sounds odd to me. Good luck!!
You may be able to reduce the calories (with Splenda) but the fat?????

If you use skim milk and those "fake" eggs you can get close. I tried this low fat eggnog and it was ok if you really want to cut down on the fat. Normal eggnog and all its fat tastes better though
I haven't tried this, but I found this recipe on line. If you try it please give a review.
GUILT FREE EGG NOG
6 C. skim milk
1 pkg. vanilla or french vanilla pudding mix
1 t. vanilla
1 t. nutmeg
¼ C. sugar
1 C. evaporated milk
Combine 2 cups of the milk, pudding mix, vanilla extract and sugar
in a bowl; mix. Pour into a half gallon container; add rest of milk
and evaporated milk
