    Autumn Recipes Thread

    Pumpkin Spice Whoopie Pies

    Ingredients:

    1 1/2 cups all-purpose flour
    1 teaspoon ground cinnamon
    1 teaspoon baking soda
    1/2 teaspoon baking powder
    1/2 teaspoon salt
    1/4 teaspooon ground nutmeg
    1/8 teaspoon ground cloves
    4 tablespoons (1/2 stick) butter, softened
    1 cup granulated sugar
    2 eggs
    1/2 cup solid pack pumpkin
    1/2 cup buttermilk
    Makes:
    About 15 whoopie pies (30 cakes total).

    Instructions:

    Step 1
    Preheat oven to 350°F. Spray Whoopie Pie Pan with vegetable pan spray.
    Step 2
    In medium bowl, combine flour, cinnamon, baking soda, baking powder, salt, nutmeg and cloves. In large bowl, beat butter and granulated sugar with electric mixer until fluffy. Add eggs, one at a time, beating well after each addition.
    Step 3
    Add flour mixture to butter mixture alternately with pumpkin and buttermilk, mixing thoroughly after each addition.
    Step 4
    Fill pan 1/2 full, spreading batter to edges of cavities.
    Step 5
    Bake 7-9 minutes or until toothpick inserted in middle comes out clean. Cool in pan 5 minutes; remove to cooling rack. Cool completely before filling.


    Filling:
    1 pkg. (8 oz.) cream cheese
    ½ cup confectioners’ sugar
    ½ teaspoon vanilla extract

    Beat cream cheese, confectioners’ sugar, and vanilla together until well combined. To assemble, spread filling on one cake and sandwich with another.

    MW - Thanks for this recipe. I just watched Paula Dean yesterday making Red Velvet Whoopie Pies on TV. They looked great but pumpkin is my fav. Will have to buy a whoopie pie pan somewhere - probs on-line!

    I have three pans which makes a total of 36 cavities to fill, but I'll leave six empty for this recipe. I have the Wilton pan with pumpkins and leaves cavities. Wilton also makes a regular round shapes pan.

    Those are fancy whoopie pies. I've never seen the fancy ones before, so it will be fun to make some. Wilton makes heart shaped ones and others, too.

    The normal whoopie pie recipe is chocolate with a marshmallow like filling:

    12 whoopie pies (24 cakes total)

    Ingredients:
    1/2 cup (1 stick) butter, softened
    1 cup firmly packed brown sugar
    1 egg
    1 teaspoon pure vanilla
    2 cups all-purpose flour
    1/3 cup cocoa powder
    1 teaspoon baking powder
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 cup buttermilk
    Whoopie Pie Filling



    Instructions:
    Step 1
    Preheat oven to 350°F. Lightly spray Whoopie Pie Pan with nonstick cooking spray.

    Step 2
    In large bowl, beat butter and sugar with electric mixer on medium speed until light and fluffy, about 3 minutes. Add egg and vanilla; beat until well combined.

    Step 3
    In another bowl, sift together the flour, cocoa powder, baking powder, baking soda and salt. Add half the dry ingredients into the butter mixture and mix on low speed. When dry ingredients are almost incorporated, stop the mixer and add the buttermilk. Continue to mix on low speed until all ingredients are almost incorporated. Stop the mixer and add the remaining dry ingredients. Mix on low until just combined. Spoon 2 tablespoons of batter into each cavity; spread batter to the edges. Cavity should be about 2/3 full.
    Step 4
    Bake for 8-10 minutes or until the top of the cake springs back when touched. Allow cakes to cool in pan 8 minutes. Remove from pan and cool completely before filling. To assemble pies spread filling on one cake and sandwich with another cake.

    Filling:
    About 2 1/2 cups of filling, enough to fill 12 whoopie pies.

    Ingredients:
    6 tablespoons butter, softened 1
    1/2 cups confectioners' sugar , sifted
    1/8 teaspoon salt
    1 jar (about 7 ounces) marshmallow creme
    1 teaspoon pure vanilla extract


    Instructions:
    Step 1
    In large bowl, beat butter with electric mixer until creamy. Add sugar and salt to the butter; mix well. Add marshmallow crème and vanilla; blend well. Use immediately to fill whoopie pies or refrigerate covered up to 1 week. Bring back to room temperature and lightly beat before using.

    I baked the Pumpkin Spice Whoopie Pies today. They're yummy! However, my oven is apparently hotter than theirs so I'll take them out sooner next time. Mine were a little crispy.
