I love Christmas celebrations, but such a big part of it traditionally is piles of delectable, fattening treats. Does anyone have any reasonably healthy recipes that are still special/holiday-ish to share? I am all for a couple batches of cookies on Christmas Eve and Christmas Day, but it's almost impossible not to gain weight if you have the treats around the house for 4 to 8 weeks.

Here is my favorite recipe for White Chili. We used it for Christmas Eve dinner this year. It's nice to have any easy meal before all the time in the kitchen the next day and the rotel tomatoes with green chiles make it look festive.


White Chili

2 Tbsp olive oil
2 garlic cloves, minced
1 large onion, chopped
3 Tbsp flour
2 tsp cumin
2 tsp chicken bouillon
1 lb dry great northern beans, cooked & rinsed
1 can (15 oz) corn, drained
2 cans (15oz) Rotel tomatoes with green chiles, not drained
2-3 cans (15 oz) chicken broth (depending on how thick you like it)
2 cups cooked chicken, shredded

In a large pot, sauté onion & garlic in olive oil. Turn heat to low. Add flour, cumin, & chicken bouillon to make a paste, adding a little of the chicken broth to get it all mixed together good. Add beans, corn, tomatoes, remaining broth, & chicken; heat thoroughly.
