frosty - I love these cookies - they are called Half Moon cookies here in the US as well - EXCEPT in the New York City area - were they are called Black and Whites (see post #2) and they look at you like you're crazy if you ask for a half moon cookie!!!

Toffee Candy Cookies

Ingredients:

1/2 cup Pecans-coarsely chopped

Cookie Layer:

1/4 cup Unsalted butter
1/4 cup Sugar
1 Egg yolk
1/2 tsp Vanilla extract
1/3 cup All-purpose flour
A pinch of salt

Toffee:

1/4 cup Unsalted butter
1/4 cup Brown sugar

Chocolate:

1/4 cup Chocolate chips


Method:

1.Heat oven to 350 degrees F.
2.Toast the pecan pieces on jelly roll pan for 8-10 minutes until lightly fragrant.
3.In large bowl, beat the butter with an electric mixer on medium until smooth.
4.Add the sugar and beat until combined, scraping side of bowl occasionally.
5.Add and beat the egg yolk until mixed well.
6.Add the flour, salt and beat until combined, scraping down side of bowl occasionally.
7.Between two sheets of waxed paper or plastic wrap with a rolling pin roll the dough to a 6x3 inch rectangle and transfer the dough to a cookie sheet.
8.Bake the dough for 20 minutes until lightly browned. Remove cookie sheet to cooling rack and allow to cool completely.
9.In a medium pot, bring the brown sugar and butter to a boil while stirring occasionally for 3-4 minutes.Spread the mixture over the cooled cookies.
10.Sprinkle chocolate chips over toffee. Return back to oven and cook for 3-4 minutes until chocolate is melted.
11.Spread the melted chocolate chips over the toffee and immediately sprinkle nuts.
12.Freeze for 20-30 minutes and break the candy into desired size, pieces.
