Giant Gingerbread Boy Cookie

5 to 5 ˝ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons ground ginger
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground cloves
1cup solid vegetable shortening
1 cup granulated sugar
1 1/4 cups molasses
2 eggs, beaten

Preheat oven to 325 degrees F. Thoroughly mix flour, baking soda, salt and spices. Melt shortening in large saucepan. Cool slightly. Add molasses and eggs; mix well. Add 4 cups dry ingredients and mix well.

Turn mixture onto lightly floured surface. Knead in remaining dry ingredients by hand. Add a little more flour, if necessary, to make a firm dough. Divide dough into 2 equal parts(recipe makes 2 giant cookies). Spray Wilton Giant Gingerbread Boy pan with vegetable pan spray. Press dough portion into prepared pan. Bake 23-25 minutes. Cool in pan on rack for 5 minutes. Turn pan over to release and cool completely.

Makes 2 cookies.

My grandson made this when he spent time with me last year.

Well, I just found a tiny error in the above instructions so here's the corrected recipe:

mmm, that looks so good! I love gingerbread

An 8 x 8-inch gingerbread cake is even yummier! When I find my recipe, I'll post it.

Edna’s Angel Gingerbread

1 cup molasses
2 eggs beaten
˝ cup sugar
2 cups flour
1 cup melted shortening
1 cup hot water
2 teaspoons soda
˝ teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
˝ teaspoon ground cloves
˝ teaspoon ginger

Combine molasses, sugar, and eggs. Sift together and add flour, soda, salt and spices. Then add
melted shortening and last of all the hot water. Bake about 50 minutes at 325 degrees F. in 8 x 8-inch pan.

This was my mother-in-law's recipe. I didn't name it Angel Gingerbread; that's what her recipe card said. Edna got married in the late twenties. Anyway, this is delicious!
