What lovely homemade stuff have you all been baking/cooking creating?

Today I've done..

18 Cottage Pies
12 Chicken in BBQ sauce with Rice
and 20 Lovely Brownies...

Actually, It was the first time I made them and wasn't thrilled! I wanted to make the apricot version, but couldn't find the apricot preserves in the store, so I ended up with blackberry. Maybe that's why???

I've just found I love doing it, weird maybe it's because all the kids are grown and I need

Well, I think it's awesome. I've always wanted to be an avid cook and baker also, maybe one day I'll get organized. :elf3:

It's funny how at work, I am super organized; but at home, it's a slightly different matter in terms of cooking meals and organizing paperwork.

Presentation-wise, not the prettiest cake in the tin :santahat: but it is delicious every time! If anybody would like the recipe do let me know :santa-smiley: It looks burnt in the pictures, but it's just poor lighting for the photo - that's actually just the sugar and cinnamon on top. It was yummy :elf1:

I just wrote the recipe out from scratch and then my daughter leaned on the mouse and closed the tab!! Ah, frustrating to say the least!

You'll need:

175g caster sugar
A large egg (or two medium/small eggs)
85g butter
75ml milk
125g self-raising flour (or plain flour and use a raising powder)
About a tablespoon of ground cinnamon
A large cooking apple, peeled and thinly sliced.

Start by peeling the apple and slicing into roughly mm thick slices. Pop them to one side and measure out your caster sugar. Pre-heat your oven to 220c and line a rectangle baking tin (like a small bread tin) with greaseproof paper.

Put your sugar and egg into a mixing bowl and use and electric whisk to mix them for 5 minutes (or until really, really thick - like mousse). If you don't have an electric whisk, I'm afraid you'll be there for a very long time!

Melt the butter in a saucepan with the milk and then add to the sugar and egg. Add a generous spinkling of cinnamon and then whisk together. Measure out your flour and then sift into the mixture (along with baking powder if you're not using self-raising). Gently whisk together until there are no lumps.

Pour half of your mixture into your prepared tin and then add half of the apple slices to the top of that. Sprinkle with a little caster sugar and cinnamon. Add the rest of your mixture, and lay the rest of your apple slices to the top of your cake mix. Add one final sprinkle of sugar and cinnamon and put your cake into your pre-heated oven. Bake for 15 minutes at 220c and then turn the temperature of your oven down to 180c and bake for a further 20 minutes.

Use a knife to check that the cake is cooked throughout. Once your cake is finished baking, remove the cake in the greaseproof paper and stand on a cooling rack until cool. Once your cake has cooled down, gently peel away the greaseproof paper, using a knife if neccessary to separate the cake from the paper. Slide the cake onto your plate and it's ready to cut and serve :christmasdinner:

Yams and sweet potatoes are actually two different types of tubers - very similar however. Both are very popular here this time of year - both names are used.

Yams and sweet potatoes are often used interchangeably - that is how similar in taste they are. I always call sweet potatoes - sweet potatoes and call yams -yams! I think most Americans call them by the proper name! I think that yams have become much more available than sweet potatoes so you hear about them more often.

It looks delicious! Have you ever made sweet potato pie? Looks similar to a pumpkin pie (a little more yellowish in color). I've never tasted one. Very popular in the African-Anerican culture.

I didn't realise you actually had real yams in America! I did a little google after I posted asking and found this:


Candied yams aren’t really made with yams. In fact, all of our familiar American yam dishes are made with sweet potatoes. The darker orange, sweeter, moist varieties of sweet potato tend to be called yams in the U.S. while the more pale (white or yellow), firm & mealy, less-sweet ones are referred to as sweet potatoes. Most Americans have never even seen a true yam.

What’s a yam if not a type of sweet potato?

True yams come from Africa and go by the botanical name: Dioscorea. The name yam derives from the word nyami, also meaning to eat. Yams are starchy tubers; but only distant relatives of potatoes and unrelated to sweet potatoes—members of the morning glory family. The skin of a true yam is rough like bark, and can be poisonous if eaten raw.

So why do Americans call orange sweet potatoes yams?

In colonial Virgina (including North Carolina, the state that leads the US in sweet potato production), farmers took to calling the paler varieties of Ipomoea batatas sweet potatoes. African slaves in the colony used the word nyami to describe orange sweet potatoes, which bear some resemblance (but no relation) to true yams. Use of the abbreviated African word yam became widespread to differentiate sweet potatoes by color. The name yam has stuck for over 300 years, commonly used to describe the tastiest and most nutritious varieties of sweet potato to thrive on this continent.

Ohh that sounds interesting! No, I never have. I've only made fake-beef pies :santahat: I'll definately consider making a sweet potato pie one day. Sounds yummy!

And here's another interesting yam fact: Did you know that eating a lot of real yams (not sweet potatos) can cause hyperovulation in women? Which is why there are greater numbers of multiple pregnancies in countries where Yams are a large part of the diet, such as Africa :elf3:

Jam-Filled Crumb Bars

1 3/4 cups all-purpose flour
1/2 cup finely chopped nuts (I used walnuts)
3/4 cup butter or margarine
1/3 cup sifted powdered sugar
1/4 teaspoon finely shredded lemon peel
3/4 cup blackberry jam, apricot preserves, or red raspberry preserves
1 tablespoon all-purpose flour

* Stir together 1 3/4 cups flour and finely chopped nuts - set aside. In large mixer bowl, beat butter/margarine until softened. Add powdered sugar and lemon peel; beat until fluffy. Add flour mixture and beat until crumbly.

* Press two-thirds of the crumbs onto the bottom of an ungreased 9x9x2 inch baking pan. Spread with jam. Stir 1 tablespoon (I needed more) flour into remaining crunb mixture and sprinkle over the jam.

* Baske at 375F oven form 25 to 30 minutes or until crumbs are golden. Cut into bars - makes 24.

Yeah, there 3 compartment ones it has Roast Potatoes and Yorkshire puds in one,
meat and veg in the other. They go to my son/daughter and my mother/father in law and us.

Very convenient, just take out in morning all ready for the tea time, I do puddings too..:elf3:

Nope, once you've had one you'll want another.....no good for dieting..I know lost loads of
weight but have slowly put it back on, I'm in the 'what the heck mode' and 'you only live once' mode...:elf1:

I don't start baking Christmas cookies until about a week after Thanksgiving (after all the decorations are set up). Actually the later the better in my house - they will eat them right out of the freezer!

I've placed them on the windowsill of the 'Restaurant' building in my Christmas Village -

Thanks, It funny really its the first time I've made them as I don't like the filling but I got a recipe and took out the stuff I didn't like, mainly candid peel and hey presto..........I eat them, lovely with all the brandy soaked into them...:elf3:
