PINEAPPLE RICE

2 cups cooked rice
1/2 cup sugar or splenda
1 can crushed pineapple
1 container thawed cool whip

mix together and refrigerate overnight
Serve chilled

1 (16oz) can solid pack pure pumpkin
1 (6oz) pack vanilla pudding mix
1/4 cup milk
1 tsp ground cinnamon
2 cups light cool whip

In medium bowl with electric mixer on med speed beat pumpkin, pudding mix, milk and cinnamon until well blended

Fold in cool whip until thoroughly blended. then spoon into serving dish cover loosely and refrigerate until ready to serve

1 cup pineapple tidbits, drained
1 cup mandarin oranges, drained
1 cup coconut
1 cup sour cream
1 cup miniature marshmallows

mix together and chill overnight.
I garnish mine with marashino cherries.

1 jar mayo
1 container sour cream
1 pack Italian Salad dressing mix
2 bags fresh spinach, chopped

mix together the mayo,sour cream and italian dressing mix until blended.
Fold in the chopped spinach. mix well.

refrigerate 24-48 hours before serving.

I serve mine with pumpernickel bread or crackers.

I have to make this every get together my family loves it!

1cup butter
1 1/2 cups sugar
2 eggs
1 1/2 tsp vanilla
1 cup sour cream
4 1/2 cups flour
1 tsp salt
1 tsp b powder
1 tsp b soda
1/2 tsp nutmeg

Cream butter, sugar and eggs
Add vanilla and sour cream
mix dry ingredients together
Stir into egg mixture 1/3 at a time.
CHill 3 hours or overnight
ROll out to 1/8 inch and cut out holiday shapes
Bake at 350 for 8-10 minutes or until light brown

10 oz lemon-lime soda
1 cup miniature marshmallows
2 - 3oz pkg cream cheese, cubed
6 oz pkg lemon flavored gelatin
20oz can crushed pineapple with juice
3/4 cup chopped pecans, optional
8 oz carton whipped topping


In a heavy saucepan, combine soda, marshmallows, and cream cheese. Bring
to boil over low heat. Remove from heat. Add gelatin, stirring until
dissolved. Stir in pineapple and pecans. Chill until the consistency of
unbeaten egg whites, about an hour. Fold in whipped topping. Pour into
lightly oiled mold. Chill until firm, about 3 hours. Makes 8-10 servings

Makes 1 Cake



1 can cherry pie filling

1 can crushed pineapple

1 box butter flavored yellow cake mix

1 stick butter or margarine

1 cup shredded coconut

1/2 cup chopped pecans

In a 9x13 inch glass casserole dish mix together cherry pie filling and crushed pineapple. Sprinkle entire box of cake mix over fruit careful not to have

any big lumps. Melt butter/margarine and drizzle over cake mix. Sprinkle coconut and nuts over entire cake. Bake at 350 degrees for 25 minutes.

6 honey maid honey graham,crushed
1 cup plus 3 Tbsp sugar, divided
3 Tbsp butter, melted
5 8oz pckg of Philly cream cheese, softened
3 Tbsp flour
1 Tbsp vanilla
1 cup Breakstones sour cream
4 eggs
1 can cherry pie filling

Heat oven to 325 degrees. Line 13x9" pan with foil. Mix crumbs, sugar and butter;
press onto bottom of pan. Bake 10 minutes.

Beat cream cheese, sugar,flour and vanilla until blended. Add sour cream; blend. Add eggs one at a time mixing on low speed until blended.

Bake 40 minutes or until center in almost set. COol completely refrigerate 4 hours Use foil to lift cheesecake from pan.

TOp with pie filling.

1/4 cup plus 2 Tbsp caramel ice cream topping, divided
1 honey maid graham Pie crust
1/2 cup plus 2 Tbsp pecan pieces, divided
1 cup cold milk
2 pck jell-o vanilla instant pudding
1 cup canned pumpkin
1 tsp cinnamon
1/2 tsp nutmeg
1 tub cool whip, thawed , divided

pour 1/4 cup caramel topping into crust; sprinkle 1/2 pecans.

Beat milk, pumpkin, pudding mixes and spices with whisk until blended. Stir in 1 1/2 cups cool whip. Spread into crust

Refrigerate one hour Top with remaining cool whip, caramel topping and pecans just before serving.

1 pastry crust for single crust pie
3 eggs, lightly beaten
1 15oz can pumpkin
1/2 cup sugar
1/2 cup dark corn syrup
1 tsp vanilla
3/4 tsp cinnamon
1 cup chopped pecans

Preheat oven to 350 degrees. Prepare pastry.
For filling, in large bowl, stir together eggs, pumpkin, sugar,
corn syrup, vanilla and cinnamon; mix well. Place pastry lined pie pan on oven rack. carefully pour filling into pastry shell. Sprinkle with pecans.
Bake 50 to 55 minutes or until knife inserted near center of pie comes out clean.
Cool pie on wire rack. TO store; cover and chill pie within 2 hours of serving.

These are an easy, chewy bar cookie

1¼ hours | 10 min prep

SERVES 12 -16

40 large caramels, unwrapped or 46 small caramels, unwrapped
2/3 cup evaporated milk
1 (18 1/2 ounce) package German chocolate cake mix
3/4 cup melted butter
6 ounces chocolate chips
1/2 cup flour
1 cup chopped nuts (optional)

Combine caramels and 1/3 cup milk in medium saucepan and cook over
low heat, stirring constantly, until melted and smooth.
In mixing bowl, combine 1/3 cup milk, cake mix, melted butter, flour,
and nuts (if desired).
Press half of mixture into greased 13x9-inch pan.
Bake at 350° for 6 minutes.
Remove from oven and sprinkle with chocolate chips.
Spread melted caramel mixture over chocolate chips, then crumble
remaining dough over top.
Bake 15 minutes.
Remove from oven and cool.
Refrigerate 30 minutes to set caramel before cutting into bars.

1 package devil's food chocolate cake mix

1 small box instant chocolate pudding mix

1 carton (8 oz) sour cream

4 eggs

1/2 cup water

1/2 cup vegetable oil

1 package (12 ounce) chocolate chips

Preheat oven to 350 degrees. In large mixing bowl, combine cake mix, pudding mix, sour cream, eggs, water, and oil; beat until blended, about 2 minutes.

Stir in chocolate chips. Pour batter into a greased bundt pan or greased 13x9x2 pan. Bake 1 hour. Remove from oven; cool. Sprinkle with powdered sugar.

1 can cream of mushroom soup
1/2 cup milk
2 tsp yellow mustard
1 16oz bag frozen broccoli flowrets, thawed
1 cup shredded Cheddar cheese
1/3 cup dry bread crumbs
2 tsp butter, melted

stir soup, milk, mustard broccoli and cheese in 1 1/2 qt casserole

mix bread crumbs with butter in a bowl and sprinkle over broccoli mixture

Bake at 350 degrees for 30 min or until hot

2 cans cream of mushroom soup
1 cup milk
2 tsp soy sauce
1/4 tsp black pepper
2 bags 16oz ea frozen cut green beans, cooked and drained
1 can French fried onion rings

Stir the soup, milk, soy sauce, black pepper, beans and
1 1/3 cups onions in 3 qt casserole

Bake at 350 for 25 minutes or until the bean mixture is hot and bubbling. stir the bean mixture and top with the remaining onions

Bake for 5 min or until onions are golden brown.

Peanut Butter Fudge

Ingredients:

1 cup Butter-sweet
1 cup Creamy Peanut Butter
1 teaspoon Vanilla
1 Box Confectioner Sugar

Microwave Butter & PB together on High for approx. 2 minutes or until melted

Add: Vanilla & Confectioner Sugar to PB mixture and stir until combined.

Pour into a buttered 8x8 inch pan lined with wax paper.
Spread mixture over wax paper then place another piece of wax paper over top
& refrigerate until cool.

Cut into 1 inch pieces & store in a covered container.

If you want to make Chocolate PB Fudge then add 1 pkg chocolate chips.
Just melt them as the same as you do the butter and peanut butter

White Chocolate Cherry Fudge



Cream cheese, white chocolate or coating, & chopped dried cherries combine
to make this candy, which may be tinted pink or left white, as you wish.

1 (8 ounce) package cream cheese, softened
2 Tablespoons butter
2 pounds white baking bars, broken into small chunks
1 1/2 cup chopped dried cherries
1 drop red food coloring (optional)

Line a 9x9-inch baking pan with foil and spray with non-stick cooking spray. In a mixing bowl, beat cream cheese with an electric mixer until smooth and creamy. In a 6-cup microwave-safe bowl melt butter on medium high heat, about 30 seconds. Add baking chocolate and continue heating until smooth and melted, about 1 1/2 to 2 minutes, stopping and stirring after 1 minute. Pour over cream cheese and beat until well blended, smooth and glossy. Fold in dried cherries and food coloring if desired. Spread in prepared pan and cool. Remove from pan and cut into 1 inch squares. Store in sealed plastic container in refrigerator, separating layers with wax paper.

Peppermint Patties



1 (14-ounce) can sweetened condensed milk
1 Tablespoon peppermint extract
Green or red food coloring (optional)
6 cups confectioners sugar
Additional confectioners sugar
1 1/2 pounds chocolate-flavored candy coating, melted

1. In large bowl, combine the condensed milk, peppermint extract and food coloring (optional). Add 6 cups confectioners sugar; beat on low speed until smooth and well blended. Turn mixture onto surface sprinkled with additional confectioners sugar. 2. Knead lightly to form smooth ball. Shape into 1-inch balls. Place 2 inches apart on wax-paper-lined baking sheets. Flatten each ball into a 1 1/2-inch patty. 3. Let dry 1 hour or longer; turn over and let dry on other side for at least 1 hour. 4. With fork, dip each patty into melted candy coating; draw fork lightly across rim of pan to remove excess coating. Invert onto wax-paper-lined baking sheets; let stand until firm.

Candy Cane Fudge



1 1/2 cups granulated sugar
1/2 cup butter or margarine
1 5 oz can evaporated milk
1 7 oz jar marshmallow cream
3 cups semisweet chocolate chips
1/2 tsp vanilla extract
2 cups candy cane pieces or peppermint pieces, crush whole candies in
plastic bag prior to measuring

Lightly grease a foil lined 9 x 9 x 2 inch pan and set aside. Heat sugar, butter, milk and marshmallow cream in heavy 3 qt saucepan over medium heat until mixture boils. Make sure to stir constantly to prevent burning. Boil and stir for 5 minutes. Add chocolate chips and vanilla, stirring until chips are melted. Stir in candy cane pieces. Remove from heat and immediately spread into prepared pan. Refrigerate overnight. Cut fudge into 1 inch squares. Store in airtight container in fridge to maintain freshness. Prior to serving, let stand 20-60 minutes for a creamy treat.

PEACH COBBLER DUMP CAKE

8 1/4 ounce box yellow cake mix

32 ounce can peaches in heavy syrup

1/2 cup butter or margarine

Ground cinnamon

Preheat oven to 375 degrees. Empty peaches into bottom of one 9x13-inch pan. Cover with dry cake mix and press down firmly. Cut butter/margarine into small

pieces and place on top of cake mix. Sprinkle top with cinnamon. Bake at 375 degrees for 45 minutes.

AUTUMN DUMP CAKE

1 box spice cake mix

2 cans sliced apples, undrained (not pie filling)

1 stick margarine or butter, melted

1/2 cup chopped pecans

In a 9x13 inch cake pan, dump in apples and spread evenly. Sprinkle with dry spice cake mix. Pour melted margarine all over dry mix. Top with chopped pecans.

Bake at 375 degrees for about 40 minutes or until bubbly. Serve warm with vanilla ice cream.

TOTAL DUMP CAKE

1 can crushed pineapple; medium

1 packet yellow cake mix

1 cup nuts; broken in pieces

1 packet flaked coconut

1 1/2 sticks of butter or margarine

Pour pineapple with juice in to ungreased 9x13 inch pan. Place coconut on top of pineapple then sprinkle box of dry cake mix over pineapple. Slice the butter

in to small patties and arrange over all. Add nuts and push into mix to cover, but not to the bottom of the pan. Bake in a preheated oven at 350 degrees

for 45 minutes or until crust is golden brown. Delicious topped with ice cream, whipped cream, or cool whip.

Sensational Sweet Potato Cake

Move over carrot cake & try this fabulous 3 layer spicy cake iced with a rich Cream Cheese Frosting. This popular cake is easily prepared with a cake mix.

1 pkg reduced-fat yellow cake mix

1 tsp ground cinnamon

1/2 tsp ground nutmeg

3 lg eggs

2 tbsp canola oil

1 1/3 c water

1 (15-oz) can sweet potatoes (yams), drained, mashed or 1 c fresh sweet potatoes, cooked, mashed

1 c drained crushed pineapple

1 tsp vanilla

Cream Cheese Frosting:

1 (8-oz) pkg light cream cheese

3 tbsp margarine

1 (16-oz) box powdered sugar

1 tsp vanilla

Heat oven to 350°F. Coat 3 (9") round cake pans with nonstick cooking spray & dust with flour. In lg mixing bowl, combine cake mix, cinnamon, nutmeg, eggs,

oil, water, sweet potatoes, crushed pineapple & vanilla. Mix at low speed until well combined. Pour into prepared pans. Bake for 20-25 min or until toothpick

inserted comes out clean. Cool; ice cake with Cream Cheese Frosting. Cream Cheese Frosting: In mixing bowl, blend together cream cheese & margarine. Gradually

add powdered sugar mixing until smooth. Add vanilla. Blend again.

Cranberry Nut Pudding

Filling:

2 bags of cranberries, 12 oz. each

1 teaspoon grated orange rind

1 cup of sugar

1/4 cup orange juice

1 cup black walnuts, chopped

1 teaspoon allspice

1/2 stick of butter, melted

Topping:

1 3/4 cup all purpose flour, sifted

1 tablespoon sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 teaspoon allspice

6 tablespoons cold butter (3/4 of a stick)

7/8 cup milk

2 tablespoons beaten egg

Preheat your oven to 375 degrees. Grease a 10 inch deep dish pie pan
with butter.

Combine the filling ingredients in a bowl and put into pie pan. For
the

topping, sift the flour, sugar, baking powder, salt and allspice
together.

Cut in the butter until the mixture is the consistency of coarse
cornmeal.

Add the milk and beat with a fork until just blended, forming a
stiff, but

sticky dough. Drop the dough in small pieces onto the filling
leaving some

spaces for steam to escape. Brush with the beaten egg and bake for a
half

hour or until golden brown.

Serve warm with French Vanilla Ice Cream and a

few chopped walnuts.

Cranberry Pecan Pie

3 Eggs, lightly beaten

2/3 c Sugar

1 ts Vanilla

1 c Chopped fress or frozen

Cranberries

1 c Golden corn syrup

2 tb Butter or margarine, melted

1 c Coarsely chopped pecans

1 tb Grated orange rind

1 Unbaked (9inch) pastry shell

In medium bowl, stir together eggs, corn syrup, sugar, melted butter
and vanilla until well blended. Stir in pecans, cranberries and
orange rind. Pour into pastry shell. Bake inpreheated 350 degree
oven 55 to 60 minutes or until knife inserted halfway between center
and edge comes out clean. Cool on wire rack. If desired, serve with
whipped cream.
Makes 8 servings.

Cheesecake Cookies

5 T Butter, softened

1/3 c Brown sugar, packed

1 c Flour

1/2 c Sugar

1 pk 8 oz cream cheese, softened

1 Egg

2 T Milk

1 T Lemon juice

1/2 t Vanilla

Heat over to 350 degrees. In a medium bowl blend thoroughly butter,
brown sugar and flour with a fork until mixture resembles coarse
crumbs. Put 1 cup of the mixture aside for topping. Press remaining
mixture into an 8x8x2 inch baking dish; bake for 15 minutes. In
another bowl combine sugar and cream cheese, mixing until smooth.
Thoroughly beat in egg, milk, lemon juice and vanilla. Spread over
the baked crust and sprinkle with remaining brown sugar mixture.
Bake for 25 minutes. Let cool, then chill for at least 1 hour.
Cut into 16 squares; serve.

Microwave Strawberry Jam Recipe
Ingredients
2 cups mashed berries
1 1/2 cups sugar
1 TBSP. Butter

Directions
Put all ingredients in a microwave container.
Do not cover.
Cook on high heat for 13 minutes.
Stir once.
Makes 1 pint or more of jam.

PUMPKIN DIP

(or Spread for Gingerbread, Quick Breads, or Pound Cake)

1 (8 oz) pkg cream cheese, softened*

1 cup brown sugar

1 cup canned pumpkin puree

1 tsp cinnamon

Whip cream cheese until fluffy.

Add brown sugar and mix until no lumps remain.

Stir in pumpkin and cinnamon until well-blended.

Serve as a dip with slices of apple, pear, jicama, other firm

crudites, or gingersnaps. Or serve as a spread with pound cake or

spicy quick breads such as gingerbread and date nut bread.

*This recipe can be made with light cream cheese, but then it is more

like a salad dressing.

Makes 2 cups

Quick Chocolate Mints

Ingredients

2 pkg (10 oz. each) mint semisweet chocolate chips
1 can (14 oz.) sweetened condensed milk
1 tsp vanilla extract

Directions

Using a glass bowl, combine chips and sweetened condensed milk.
Microwave on High 1-1/2 minutes and stir well. Heat another 1 - 1-
1/2 minutes more, or until mixture is smooth and chocolate is melted
when stirred. Stir in vanilla. Turn into a buttered 8x8" pan.
Refrigerate 2 - 3 hours or until firm. Cut into 25 squares. Store,
tightly covered, in refrigerator.

PRALINE HOLIDAY PIE

1/3 c. butter or margarine
1/3 c. firmly packed brown
sugar
1/2 c. chopped pecans
1 lightly baked 9 5/8-inch or
9-inch Mrs. Smith's pie
shell
1 pkg. (5 1/2 oz.) Jell-O
instant pudding and pie
filling (vanilla flavor)
2 1/2 c. milk
1 envelope Dream Whip whipped
topping mix

Combine butter, brown sugar and nuts in a saucepan;
heat until butter and sugar are melted. Spread in bottom of
pie shell. Bake at 450 degrees for 5 minutes or until bubbly; cool.
Prepare pie filling mix with 2 1/2 cups milk as directed on
package for pie. Measure 1 cup filling; set aside. Pour
remaining filling into pie shell. Prepare whipped topping mix
as directed on package; blend 1 1/3 cups into the measured pie
filling. Spoon into pie shell; chill 3 hours. Garnish with
remaining whipped topping and pecans, if desired.
Or use 1 package (5 ounces) Jell-O pudding and pie
filling (vanilla flavor). Prepare pie filling mix as directed
on package for pie, using 2 1/2 cups milk. Measure 1 cup;
cover and chill thoroughly. Pour remaining filling into pie
shell; chill.

Super Simple Lemon Bars

1 pkg. angel food cake mix -- one-step mix kind
1 can lemon pie filling -- (22 oz)

Preheat oven to 350°. Mix lemon pie filling with dry angel food cake mix in large bowl. Bake in a greased jelly roll pan for 30 minutes.
If desired, bars can be topped with nuts or coconut before baking, but remember to add the points if you add the nuts. Cool and cut into 30 bars.

Chewy Chocolates

Ingredients

1/2 lb soft caramels
2 tbsp heavy cream
1 cup pecan halves
4 squares semi-sweet chocolate, melted, cooled

Directions

In a large bowl, whisk together egg whites and salt until foamy, about 2 minutes. Whisk in condensed milk and vanilla. Fold in coconut, chocolate morsels, and crushed peppermint.

Using a 1 1/2-inch spring-loaded, ice cream scoop, drop dough onto prepared baking sheets; bake for 20 minutes, or until coconut just begins to brown. Let cool on pans for 10 minutes. Remove from pans, and cool completely on wire racks.

Bourbon Pecan Shortbread

1/2 cup butter or margarine, softened
1/2 cup confectioners' sugar
1/2 teaspoon vanilla extract
1 tablespoon bourbon whiskey
1/4 cup pecans
1 cup all-purpose flour
2 tablespoons cornstarch

Grind the nuts with 1/2 cup flour in a food processor. Pulse on and
off till the nuts are ground to a fine crumb. Add the rest of the
flour and the cornstarch. Pulse to mix.

In a separate bowl, cream the butter or margarine. Mix in the
confectioners' sugar, vanilla, and bourbon. Work in the flour mixture.
Knead the dough until smooth.

Lightly spray your shortbread pan, or an 8 inch round pan, with
a vegetable oil spray. Firmly press the dough into the pan, working
from the center out. Poke the shortbread all over with a fork.

Bake at 325 degrees F (165 degrees C) for 35 minutes, or till lightly
browned. Let cool for 10 minutes in the pan. Loosen the edges with a
knife, and flip the pan over onto a cutting board. Tap lightly to
loosen from pan. Cut into serving pieces while still warm.

In a large bowl, combine brown sugar, corn syrup, and eggs. Add melted butter, stirring to combine. Stir in dates, nuts, and vanilla. Pour mixture evenly over baked crust. Bake for 33 to 35 minutes, or until center is set. Cool completely before cutting into bars.

Light Pumpkin Whip

3 oz. pkg. instant sugar free butterscotch pudding mix
1 1/2 c. cold milk
1 c. canned pumpkin
1 t. pumpkin pie spice
1 1/2 c. Cool Whip

In a mixing bowl, beat pudding and milk until well blended, about 1 or
2 minutes.

Blend in pumpkin and pie spice.

Fold in Cool Whip.

Spoon into dessert dishes. Chill. Garnish with gingersnaps if desired.

CHOCOLATE NUT TOFFEE

1/2 c. chopped nuts
3/4 c. brown sugar
1/2 c. butter or margarine
1 c. (6 oz. bag) semisweet chocolate chips

Spread nuts over bottom of a lightly buttered 8-inch square pan.
Combine brown sugar and butter in a medium saucepan. Bring to a rolling
boil, stirring constantly. Boil about 7 minutes or to a temperature of
270* F. Pour over nuts in pan. Sprinkle with chocolate chips. Cover
tightly with foil for 2 minutes. Then spread chocolate evenly. Cool.
Break into pieces. Makes about 1 pound.

Potluck Potato Casserole

1 1/2 cups fat-free sour cream
1 1/4 cups (5 ounces) finely shredded reduced-fat sharp cheddar cheese
1/2 cup fat-free, less-sodium chicken broth
2 tablespoons minced fresh onion
5 teaspoons butter, melted
1/2 teaspoon freshly ground black pepper 1/4 teaspoon salt
1/8 teaspoon ground red pepper
1 (30-ounce) package frozen hash browns, thawed 1 (10.75-ounce) can
reduced-fat cream of chicken soup Cooking spray
1 cup coarsely crushed cornflakes
2 tablespoons chopped fresh parsley

CANDY CANE STICKS

These cookies are yummy and especially good for Christmas time. They have stripes like real candy canes and that great peppermint taste. Easy to make too.

16 oz tube refrigerated sugar cookie dough
1/2 cup finely crushed peppermint candy canes
1/2 tsp mint extract
3/4 cup all purpose flour
3/4 cup confectioners sugar

Line 2 baking sheets with foil, set aside. In a bowl, knead together cookie dough, 1/4 cup crushed candy canes, mint extract and flour until combined. Break off a level tsp of dough and roll into a 5" long rope. Transfer to baking sheet. Repeat until entire sheet is full. Cover dough and refrigerate in between batches. Bake at 350 degrees for 7 min. or until puffed and just beginning to color, DO NOT OVERBAKE. Remove cookies to a wire rack to cool completely. Repeat using all dough.

To form a glaze, stir together confectioners sugar and 4 tsp water until smooth, spreading consistency. Brush some of the glaze over sticks and let dry completely. With a small paintbrush, use remaining glaze to paint stripes diagonally across sticks, spacing 1/2" apart. Immediately sprinkle stripes with some of the remaining crushed candy to resemble a candy cane. Let dry completely. MAKES 60 COOKIES.*

Coal Candy
Christmas tradition says that boys and girls who have been naughty get a
lump of coal in their stocking rather than a fun to or a sweet treat.
But in the mining towns of Pennsylvania, coal would never be used to
signify bad behavior. Here, coal is a good thing, and children are
delighted to find lumps of coal in their Christmas stocking. Coal candy,
that is.

At the cash register in the old diner section of the Dutch Kitchen, you
can buy locally made coal candy by the bucketfuls. It is licorice, black
and shiny like a nugget of freshly mined anthracite. It comes in large,
irregular chunks packaged with a small hammer. The way to enjoy is to
set a hunk out on a clean surface and use the hammer to smash it into
little bite size fragments.

The unique confections was invented over in the neighboring town of
Pottsville, where Ned Buckley's family has been running the Mootz Candy
Store on Main Street since 1908. Mootz is know for chocolate covered
nuts, creamy peanut rolls, molasses coconut strips and chocolate
novelties made in molds that look like hairdressers tools, golf clubs,
antique cars and bingo boards. It was Ned Buckley's grandmother who came
up with the idea for coal candy some time in the 1950s when the coal
industry was still thriving. Mootz sells its coal candy, known as Black
Diamonds, in boxes, miniature miner's buckets, and toy train cars. And
at Christmas, you can buy stockings already filled with it.

2 cups sugar
3/4 cup light corn syrup
1/2 cup water
1 teaspoon anise extract
1/2 teaspoon black paste food coloring

Preparation:
Line 8-inch square baking pan with foil, extending edges over sides of
pan. Lightly grease foil with butter; set aside. Measure sugar, corn
syrup and water into heavy 2-quart saucepan. Stir over medium-low heat
until sugar is dissolved and mixture comes to a boil, being careful not
to splash sugar mixture on side of pan. Carefully clip candy thermometer
to side of pan (do not let bulb touch bottom of pan). Cook about 15
minutes until thermometer registers 290°F, without stirring. Immediately
remove from heat. Stir in anise extract and food coloring. Pour mixture
into prepared pan. Cool completely.

Lift candy out of pan using foil; remove foil. Place candy between 2
layers of heavy-duty foil. Pound with mallet to break candy into 1- to
2-inch pieces.

YAM AND RAISIN COOKIES

from the McLean Estate in Irving, TX

1 cup shortening

1 egg

1 vanilla

1 cup cooked mashed yams

2 cups flour

1/4 teaspoon allspice

1/2 teaspoon salt

1/2 teaspoon nutmeg

1/2 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon cinnamon

1 cup raisins

Preheat oven to 350. Combine dry ingredients and set aside. Cream shortening, eggs and vanilla then add yams and mix well then stir in dry ingredients and

1 can sweetened condensed milk

7 ounces flaked coconut

1/2 cup chopped almonds, toasted

1/2 cup margarine, melted

1 grated peel of lemon

1/4 teaspoon almond extract

1 cup all-purpose flour

1 teaspoon baking powder

Drain pineapple well. Reserve juice for beverage. Combine drained pineapple, sweetened condensed milk, coconut, almonds, margarine, 1-teaspoon lemon peel

Gingerbread Pudding Cake

1/4 cup butter, softened
1/4 cup sugar
1 egg white
1 teaspoon vanilla extract
1/2 cup molasses
1 cup water
1 1/4 cups flour
3/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon salt
1/4 teaspoon ground allspice
1/8 teaspoon ground nutmeg
1/2 cup chopped pecans

Topping
6 tablespoons brown sugar
3/4 cup hot water
2/3 cup butter, melted

Cream butter and sugar, add egg white and vanilla.

Combine molasses & water until blended. Mix flour, baking soda,
cinnamon, ginger, salt, allspice and nutmeg; add to creamed mixture
alternately with molasses mixture, beating well after each addition
then fold in pecans.

Grease a 3 quart slow cooker, pour batter into cooker.

Topping:
Sprinkle with brown sugar. Combine hot water and butter; pour over
batter but DO NOT STIR.

Cover and cook on high for 2 to 2 1/2 hours or until a toothpick
inserted near the center of cake comes out clean. Turn off heat. Let
stand for 15 minutes. Serve warm.

3 MINUTE CHOCOLATE MUG CAKE
1 Coffee Mug (microwave safe) 4 tablespoons flour (that's plain
flour, not self-rising)
4 tablespoons sugar
2 tablespoons baking cocoa
1 egg
3 tablespoons milk 3 tablespoons oil
3 tablespoons chocolate chips (optional) mini chips would be the best

Add dry ingredients to mug, and mix well.
Add the egg and mix thoroughly.

Miniature Chocolate-Peanut Butter Pies

1 1/4 c Graham cracker crumbs

5 tb Unsalted butter, melted

1/2 c Plus 2 T sour cream

2 1/2 tb Powdered sugar

2 tb Whipping cream

1/2 c Plus 2 T creamy peanut

-butter..do not use old- Fashioned style or freshly -ground!

1/2 c Whipping cream (in addition

-to above)

4 oz Semisweet chocolate, chopped

Mix graham cracker crumbs and butter in a small bowl. Press crumb
mixture on bottom and up sides of 24 mini- muffin tins (each about 1
3/4 inches in diameter). Place in freezer for 20 minutes.

Whisk sour cream, powdered sugar and 2 T whipping cream in bowl to
blend. Add peanut butter and whisk until smooth. Spoon 1 T peanut
butter mixture into each graham cracker crust; freeze 3 hours. Bring
1/2 C cream to simmer in heavy saucepan. Reduce heat to low. Add
chocolate; stir until melted. Cool completely, stirring
occasionally. Spoon 2 teaspoons chocolate mixture over each peanut-
butter pie. Place in freezer until set. (can be prepared 1 week
ahead. Keep frozen.) Using tip of small sharp knife as an aid,
gently pry pies from tins. Let stand at room temperature for 10
minutes before serving.

3 c Unsifted flour

1/4 ts Baking soda

2 c Sugar

1 c Butter, softeded

6 Eggs

Brownies: Combine sugar, butter and chocolate in a large saucepan;

into a greased 13x9x92" pan. Bake at 350 degrees 30-35 minutes. Cool
on a wire rack. Pour frosting over top; chill 15 minutes, and cut
into aquares. Garnish if desired. Makes 4 doaen. Frosting: Heat
whipping cream in a medium saucepan over medium heat; add chocolate,
stirring until smooth. remove from heat and cool to room
temperature. Makes 2 1/2 cups.

Kahlua Fudge Brownies

1 1/2 c Flour -- sifted
1/2 ts Baking powder
1/2 ts Salt
2/3 c Butter
3 Squares unsweetened baking
Chocolate

2 c Sugar
1/4 c + 1 Tb Kahlua
3/4 c Walnuts -- chopped

Grease a 9" square pan. Preheat oven to 350 degrees. Sift flour,
baking powder, and salt together. Melt butter and chocolate together
over low heat. Beat eggs and sugar until light. Add flour mixture,
chocolate mixture and 1/4 cup Kahlua. Blend well. Stir in nuts. Bake
30 minutes or until done. Cool in pan. Brush with remaining Kahlua.

CRANBERRY CASSEROLE DESSERT

2 c. chopped apples
2 c. fresh cranberries
2 c. sugar
Chopped nuts
1/2 c. oatmeal
1/2 c. brown sugar
1/3 c. flour
1 stick butter, melted

Mix apples, cranberries. Place in buttered casserole pan;
pour granulated sugar over mixture. Mix oats, brown sugar,
butter and flour; sprinkle on top of cranberries, sugar and
apples. Top with nuts; pat gently, bake 1 hour at 325
degrees. Cut in squares when cool.

1 2/3 cup water
1 box instant french vanilla pudding mix( I use Banana Cream)
1 (12oz frozen cool whip thawed
! (11oz) box vanilla wafers
8 medium ripe bananas

In large bowl combine sweetened condensed milk, water and pudding mix beat with electric mixer til smooth. CHill 5 minutes fold in whipped topping. Pour in serving dish to cover bottom, spread cookies then layer bananas and repeat garnish with whip topping and a few vanilla wafers

Serve immediately.

4 c. Sugar
1 c. Light corn syrup
3/4 c. Water
Dash of salt
3 egg whites
1 tsp. Vanilla extract
1/2 c. Chopped pecans (optional)

Combine sugar, corn syrup, water and salt in a 2-quart glass casserole. Microwave on HIGH for 19 minutes, stirring every 5 minutes.

Beat egg whites until very stiff. Pour hot syrup gradually over the egg whites, beating at high speed for about 12 minutes or until thick and candy begins to lose gloss. Fold in vanilla and nuts. Drop by spoonfuls onto waxed paper.

1/4 lb. butter
1 c. chopped nuts

Put fruit, including juice, into 9x13 pyrex pan. Sprinkle dry cake mix over top. Dot with butter and sprinkle nuts on top. Bake one hour at 350 degrees. Enjoy.

Butter Pecan Pumpkin Pie

1 quart butter pecan ice cream, softened
1 pastry shell (9 inches), baked
1 cup canned pumpkin
1/2 cup sugar
1/4 teaspoon each ground cinnamon, ginger and nutmeg
1 cup heavy whipping cream, whipped
1/2 cup caramel ice cream topping
1/2 cup chocolate ice cream topping, optional
Additional whipped cream

Spread ice cream into the crust; freeze for 2 hours or until firm.
In a small mixing bowl, combine the pumpkin, sugar, cinnamon, ginger
and nutmeg; fold in whipped cream. Spread over ice cream. Cover and
freeze for 2 hours or until firm. May be frozen for up to 2 months.
Remove from the freezer 15 minutes before slicing. Drizzle with
caramel ice cream topping. Drizzle with chocolate ice cream topping
if desired. Dollop with whipped cream.
Yield: 6-8 servings.

Bavarian Mint Fudge

1-1/2 teaspoons plus 1 tablespoon butter, divided
2 cups (12 ounces) semisweet chocolate chips
1 package (11-1/2 ounces) milk chocolate chips
1 can (14 ounces) sweetened condensed milk
1 teaspoon peppermint extract
1 teaspoon vanilla extract

Line an 11-in. x 7-in. pan with foil and grease the foil with 1-1/2
teaspoons butter; set aside.
In a heavy saucepan, melt the chocolate chips and remaining
butter
over low heat; stir until smooth. Remove from the heat; stir in the
milk and extracts until well blended. Spread into prepared pan.
Refrigerate until set.
Using the foil, lift fudge out of the pan. Discard the foil; cut
fudge into 1-in. squares. Store in the refrigerator.

Banana Cheesecake

3/4 cup all-purpose flour
3/4 cup finely chopped pecans
3 tablespoons sugar
2 tablespoons brown sugar
1-1/2 teaspoons vanilla extract
6 tablespoons butter, melted
FILLING:
1 cup mashed ripe bananas
2 tablespoons lemon juice
2 packages (8 ounces each) cream cheese, softened
1-1/4 cups sugar
2 tablespoons cornstarch
1/8 teaspoon salt
3 eggs, lightly beaten
1 cup (8 ounces) sour cream
1-1/4 teaspoons vanilla extract
TOPPING:
1 cup (8 ounces) sour cream
1/4 cup sugar
1/4 teaspoon vanilla extract
1 cup assorted fresh fruit

Combine the first five ingredients; stir in butter. Press onto the
bottom of a greased 9-in. springform pan; place on a baking sheet.
Bake at 350 degrees for 10 minutes or until lightly browned. Cool on
a wire rack.
Combine bananas and lemon juice; set aside. In a large bowl,
beat the cream cheese, sugar, cornstarch and salt until smooth. Add
eggs; beat on low speed just until combined. Stir in the sour cream,
vanilla and banana mixture. Pour into crust. Place pan on a baking
sheet.
Bake at 350 degrees for 50-60 minutes or until center is almost
set. Let stand for 5 minutes. Combine sour cream, sugar and vanilla;
spread over top of cheesecake. Bake 5 minutes longer.
Cool on a wire rack for 10 minutes. Carefully run a knife around
edge of pan; cool 1 hour longer. Refrigerate overnight. Remove sides
of pan; garnish with fruit.
Yield: 12-14 servings.

White Chocolate Coconut Truffles
4 tbsp unsalted butter
8 oz white chocolate, finely chopped
1 cup shredded sweetened coconut, divided
1 large egg yolk, at room temperature
2 tbsp coconut liqueur or light rum
1/2 tsp vanilla

Met the butter in a heatproof bowl over very hot, not simmering, water.
Add the white chocolate and melt, stirring occasionally, just until smooth.

Remove from the heat and whisk in 1/4 cup of the coconut, the egg yolk,
coconut liqueur and vanilla. The mixture may separate, but keep whisking
and it will come together. Cover tightly with plastic wrap and
refrigerate until firm, at least 3 hours or overnight.

Using a melon baller, scoop up the mixture and roll into 1 inch balls.
Roll each ball in the remaining coconut, pressing the coconut on so it
will adhere. Refrigerate until ready to serve. (The truffles can be
prepared up to 3 days ahead, tightly covered and refrigerated, or frozen
for up to 1 month.) 30 truffles

1 Pineapple Cake Mix
1/2 cup oil
2 eggs
A combination of any of the following to equal 2 cups:
raisins, crasins, nuts, dates, coconut, chocolate or white chips or anything else you can think of.........Mix all together.... ...drop by spoonfuls onto cookie sheet. Bake at 350' for approx. 10-11 min.....do not over bake as cookies will get too hard.

Reindeer Chow

5 cups Crispix Cereal
1 cup peanut butter
12 oz. package of semi-sweet chocolate morsels
1 box confectioner's sugar

1. Melt chocolate in microwave 1 minute at a time until melted.
2. Add peanut butter to melted chocolate and mix well.
3. In a large bowl (with a snap on lid), add melted chocolate and peanut butter to top of cereal and mix well.
4. Add confectioner's sugar and cover bowl with lid. Shake well to coat thoroughly.

If you don't have a bowl with a lid, you can place the coated cereal and confectioner's sugar in a large ziploc bag and shake well.

Chocolate 'N' Toffee Rice Pudding

3 cups milk
3 cups cooked rice
1/2 cup packed brown sugar
3 tablespoons butter
1/4 teaspoon salt
1 teaspoon vanilla extract
1/4 cup flaked coconut, toasted
1/4 cup English toffee bits or almond brickle chips
1/4 cup miniature semisweet chocolate chips
1/2 cup whipped topping
7 maraschino cherries

In a large saucepan, combine the milk, rice, brown sugar, butter and
salt; bring to a boil over medium heat. Cook for 15 minutes or until
thick and creamy, stirring occasionally. Remove from the heat; stir
in vanilla. Cool.
Spoon half of the pudding into dessert dishes. Combine the
coconut, toffee bits and chocolate chips; sprinkle half over the
pudding. Repeat layers. Refrigerate until serving. Top with whipped
topping and cherries.
Yield: 7 servings.

Peanut Butter Ripple Brownies

Ingredients

3/4 cup sugar
1/2 cup peanut butter
1/4 cup flour
2 eggs
1 pkg Betty Crocker Supreme fudge brownie mix (with 1 can of
chocolate syrup)

Peanut Butter Frosting

1 cup Betty Crocker creamy deluxe vanilla ready to spread frosting
1/3 cup peanut butter
2 - 3 tbsp milk (for desired consistency)

Directions

Heat oven to 350º F. (175º C)
Grease bottom of 9x13" rectangular pan

Mix sugar, peanut butter, flour and eggs in small bowl. Beat at
medium speed 2 minutes. Prepare cake-like brownies as directed on
pkg. Spread dough in pan. Drop peanut butter mixture by tbsp. onto
dough. Swirl through dough with knife for marbled effect. Bake 38 -
40 minutes. Cool

frost with peanut butter frosting. Sprinkle with chopped peanuts if
desired. Cut into 1-1/2" squares. Peanut butter Frosting: Mix all
ingredients until frosting is smooth and of spreading consistency

Makes 48 brownies

INSIDE OUT REESES
2 (3 oz.) pkg. cream cheese, softened
1/3 c. Hershey's cocoa
1 c. chopped nuts
1 tbsp. milk
4 c. powdered sugar
1 tsp. vanilla

Mix and chill about 1 hour. Form into little balls and chill overnight. Melt 1 pkg. Reeses peanut butter chips and 2 tablespoons Crisco. Dip ball
into this mixture. Cool on wax paper lined cookie sheet in refrigerator.

Cinnamon Pancake Mix in a Jar



Ingrediants:

3 cups Flour

2 tablespoons Sugar

2 tablespoons Baking Powder

4 1/2 teaspoons Cinnamon

1 1/4 teaspoons Salt





Directions:

In a quart jar,

combine all ingredients in layers, placing flour on bottom,

then cinnamon in middle&

other ingredients on top. Seal jar.

Store in a cool, dry place up to 6 months before using. Use the

following recipe when you are ready to make pancakes, or

copy it onto a recipe card

& attach it to your decorated jar to give as a gift:

Cinnamon Pancakes

In a medium bowl, combine

3/4 cup Milk,

1 Egg

2 Tbsp. Vegetable Oil.

With a wire whisk, blend in

1-1/3 cups Pancake Mix

until moistened but still lumpy. Cook on a lightly greased griddle or

skillet. Makes about 10- 5 inch pancakes.

Notes:

This recipe makes wonderful waffles as well!

Simply make batter a bit thicker by adding less liquid

when mixing it up. Enjoy!

Chocolate Chip Pancakes





The kids love these.. and they can help

1 1/4 C flour

1 T sugar

1/4 tsp. cinnamon

1 T baking powder

1/4 tsp. salt

2 eggs

1 C milk

4 T melted butter

3/4 tsp. vanilla

3/4 C chocolate chips



Preheat griddle or skillet. Combine flour, sugar, cinnamon, baking powder and salt in a large bowl. Mix together liquid ingredients and beat into dry mixture

until smooth. Fold in the chocolate chips. Pour 1/4 cup batter for each pancake onto hot griddle. Cook until the bubbles that form on top begin to pop,

before flipping, then cook a minute or so more. Serve immediately topped with your favorite syrup.

Peanut Butter Marshmallow Squares

1/2 cup butter1 (11 ounce) package butterscotch chips
1 cup peanut butter
1 cup flaked coconut
1 cup chopped walnuts
3 1/2 cups miniature marshmallows

In the lower pot of a double boiler, add water halfway to top and bring
to a boil. Reduce heat to a simmer. In the top of a double boiler, heat
butter, butterscotch chips, and peanut butter until melted.
Remove from heat. Stir in coconut, walnuts, and marshmallows. Pour
mixture in buttered pan. Refrigerate and cut into squares. Store in the
refrigerator.

Friendship Brownie Mix

2/3 cup sugar
1/2 cup white baking chips
1/2 cup semi-sweet chocolate chips
1/2 cup walnuts

Chocolate Covered Candy Canes

1/2 cup semisweet chocolate chips
2 t. shortening
16 peppermint candy cans or sticks
Crushed hard peppermint candy or miniature chocolate chips, if desired

Line jelly roll pan with waxed paper. Heat chocolate chips and
shortening in pan over low heat until melted. Tip pan so chocolate runs
to one side. Dip 1 candy cane at a time into chocolate, coating about
2/4 of each stick with chocolate. Place in pan. Let stand about 2
minutes or until chocolate is almost dry. Roll chocolate dipped ends in
crushed peppermint candy. Let stand about 10 minutes or until chocolate
is dry. Store loosely covered at room temperature up to 2 weeks. Makes
16 candy canes
To microwave: Mix chocolate chips and shortening in 2 cup microwavable
measure. Microwave on medium (50%) power about 3 minutes or until
chocolate chips are softened. Stir until smooth. Continue as directed.

Chunky Blond Brownies

1/2 cup butter, softened
3/4 cup sugar
3/4 cup packed brown sugar

1 jar (3-1/4 ounces) macadamia nuts or 3/4 cup blanched almonds,

In a large mixing bowl, cream butter and sugars until light and
fluffy. Add eggs and vanilla; mix well. Combine flour, baking powder
and salt; add to creamed mixture and mix well. Stir in vanilla chips,
chocolate chunks and 1/2 cup nuts.
Spoon into a greased 13-in. x 9-in. baking pan; spread to evenly
cover bottom of pan. Sprinkle with remaining nuts. Bake at 350
degrees for 25-30 minutes or until top begins to crack and is golden
brown. Cool on a wire rack. Cut into bars.
Yield: 2 dozen.

Turtle Cake Recipe
INGREDIENTS:


1 box (1 pound 2 ounces) German chocolate cake mix

1 package (14 ounces) caramels

1/2 cup butter

1 can (5.33 ounces) evaporated milk

1 cup chopped pecans

1 cup semi-sweet chocolate chips
TO PREPARE:

1. Mix cake according to directions on box. Pour half of batter into prepared 13 x 9-inch pan. Bake 15 minutes.
2. Melt caramels with butter and milk. Pour over cake.
3. Sprinkle pecans and chocolate chips over caramel layer.
4. Cover with rest of batter and bake 15 to 20 minutes longer.

Temperature: 350 degrees
Times: 15 minutes
15 to 20 minutes

HINT: Delightful served warm with whipped cream.

Potato-Ham Hash
INGREDIENTS
4 cups frozen Potatoes O'Brien
1 cup diced ham
Shredded reduced-fat Cheddar cheese
Parsley or cilantro
Oil

PREPARATION
Heat a little oil in a large non stick fry pan.Add 4 cups frozen Potatoes O’Brien and 1 cup diced ham. Cover and cook over medium heat 5 minutes without turning. Stir mixture and cook 5 minutes longer, gently turning with a spatula occasionally, until potatoes are crisp. Remove from heat and sprinkle with a little shredded reduced-fat Cheddar and some parsley or cilantro, if you like. Serves 4

Barbecued Meatballs

Ingredients


3 lb. Ground beef
1 1/2 cups oatmeal
2 cups milk
3 tsp. Salt
Pepper
6 Tbsp. Chopped onion.


Sauce:
2 Tbsp. Worcestershire sauce
3 Tbsp. Vinegar
3 Tbsp. Ketchup
2 Tbsp. Brown sugar
1 cup water
6 Tbsp. Chopped onion


Sauce Variation:
3/4 tsp. Worcestershire sauce
1 cup ketchup
1/2 cup water
3 Tbsp. Vinegar
3 Tbsp. Sugar
Directions

Mix all together. Roll in balls and place in baking dish. Mix up sauce of your choice. Combine and pour over meatballs. Bake in 350 degrees F oven for 1 1/2 hours. Makes 24 small meatballs

Pecan Rolls



36 pecan halves
1/2 cup brown sugar
1/2 cup butter

Put 2 tsp. Brown sugar, 2 tsp. Butter and 3 pecan halves in each of 12 muffin holes in a muffin pan.

2 cups biscuit baking mix
2/3 cup mashed bananas
1 tsp cinnamon
2 tbsp butter, melted
1/4 cup brown sugar
15 caramels
2 1/2 tbsp canned evaporated milk

Mix the biscuit baking mix, bananas and cinnamon. Knead. Roll into a rectangle. Combine canned milk & caramels and melt in microwave (or melt in a double boiler). Spread rectangle of dough with butter, then melted caramel/canned milk. Sprinkle with brown sugar. Roll tightly. Slice into 12 pieces and put into muffin pan.

Bake at 375F for 8 - 10 minutes (until cooked). Invert pan onto a cookie sheet or serving tray. Leave inverted 1 - 2 minutes so syrup will run out. Serve immediately.

Low Fat Creamy Fruit Salad

2 each Gold & Red Delicious apples, diced
1 cup each red & green grapes, halved
8 oz can pineapple chunks
1 orange diced

Dressing:
2 Tbsp fat free softened cream cheese
1/4 cup fat free sour cream
1/4 cup fat free mayonnaise
3 packets sweetener

Mix cream cheese, sour cream, mayonnaise and sweetner together well,
then pour in with fruit mix and chill.

Pecan Pie Cheesecake

1 (2-pound, 4-ounce) package frozen MRS. SMITH'S Special Recipe
Southern Pecan Pie
2 cups graham cracker crumbs
1/2 cup DOMINO Granulated Sugar
1/2 cup butter, melted
1/4 teaspoon McCORMICK Gourmet Collection Saigon Cinnamon
2 (8-ounce) packages PHILADELPHIA Cream Cheese, softened
2 large eggs
2/3 cup sour cream
1/2 cup half-and-half
1 teaspoon vanilla extract
1 cup DOMINO 10-X Confectioners Sugar
1 tablespoon all-purpose flour
19 pecan halves

Preheat oven to 325 degrees. Thaw pecan pie according to package
directions. Cut evenly into 20 thin slices, keeping wedges intact,
and set aside.

Stir together graham cracker crumbs and next 3 ingredients; press
mixture onto bottom and 1 1/2 inches up sides of a 10-inch springform
pan.

Arrange 10 pecan pie wedges in a spoke design in prepared pan,
placing 1 cut side of each wedge on crust with narrow end towards
center of pan. Reserve remaining pecan pie wedges for another use.

Beat cream cheese until smooth; add eggs, 1 at a time, beating after
each addition. Add sour cream, half-and-half, and vanilla; beat until
blended. Fold in confectioners sugar and flour. Carefully pour cream
cheese mixture evenly over pecan pie wedges in pan, making sure
wedges remain in place. Arrange pecan halves evenly around edge and
center.

Bake at 325 degrees for 50 minutes. Turn off oven, and let cheesecake
stand in oven 1 hour. Remove to a wire rack, and let cool completely.
Chill at least 8 hours or overnight before serving.

Chocolate Chip-Buttermilk Custard Pie

1/2 (15-ounce) package refrigerated piecrusts
1/2 cup butter, softened
1 1/2 cups sugar
3 1/2 tablespoons all-purpose flour
3 large eggs
3/4 cup buttermilk
1 teaspoon vanilla extract
1 1/2 cups semisweet chocolate morsels

Fit piecrust into a 9-inch deep-dish pieplate; fold edges under, and
crimp. Bake at 400° for 6 minutes; cool crust on a wire rack. Reduce
oven temperature to 350°.
Meanwhile, beat butter, sugar, and flour at medium speed with an
electric mixer until blended. Add eggs, buttermilk, and vanilla; beat
well. Fold in chocolate morsels. Pour into prepared crust.
Bake at 350° for 1 hour until just set and lightly browned. Cool
completely before serving.
Tip: Make this pie the day before you plan to serve it so it has
plenty of time to cool.
Yield

Chocolate Peanut Clusters

1 bag chocolate chips
1 bag butterscotch chips
2 Tbls. Creamy peanut butter
1/2 cup salted peanuts
4 cups crisp rice cereal

Melt chocolate, butterscotch and peanut butter over low heat stirring

Butterfinger Popcorn Balls

6 cups popped popcorn
3 (2.1-ounce) NESTLE® BUTTERFINGER® Candy Bars, chopped
1/4 cup butter or margarine
3 1/2 cups miniature marshmallows
Combine popcorn and chopped Butterfinger in large bowl.
Melt butter in medium saucepan over low heat. Stir in marshmallows.
Heat, stirring constantly, until marshmallows are melted and mixture is

1 lb. boneless skinless chicken breast halves
2 medium green or red peppers, cut into wedges
1 medium onion, sliced
1 cup KRAFT or BULL''S-EYE Original Barbecue Sauce
4 TACO BELL HOME ORIGINALS Flour Tortillas

Place chicken and vegetables on greased grill over medium coals.

Grill chicken 6 to 7 minutes on each side or until cooked through and
vegetables 4 to 5 minutes on each side or until crisp-tender, brushing
each frequently with sauce.

Slice chicken and vegetables into thin strips. Divide filling among

Mandarin Orange Cream Pie

1- 3oz. pkg orange gelatin
1/2 cup boiling water
1 1/4 cup cold club soda
1/2 cup whipped topping
1- 11oz. can mandarin oranges
1- 9" graham cracker pie crust

Ingredients:
1 can (8 ounces) sliced pineapple
3/4 cup teriyaki sauce
1 pound ground beef
1 large sweet onion, sliced
1 tablespoon butter
4 lettuce leaves
4 sesame seed or onion buns, split and toasted
4 slices Swiss cheese
4 bacon strips, cooked

Directions:
Drain pineapple juice into a small bowl; add teriyaki sauce. Place 3 tablespoons in a resealable plastic bag. Add pineapple; toss to coat and set aside. Shape beef into four patties; place in an 8-in. square baking dish. Pour the remaining teriyaki sauce mixture over patties; marinate for 5-10 minutes, turning once.
Drain and discard teriyaki marinade. Grill, covered, over medium heat or broil 4 in. from the heat for 6-9 minutes on each side or until no longer pink. Meanwhile, in a small skillet, saute onion in butter until tender, about 5 minutes; set aside.
Drain and discard pineapple marinade. Place pineapple on grill or under broiler to heat through. Layer lettuce and onion on bottom of buns. Top with burgers, cheese, pineapple and bacon. Replace tops; serve immediately. Yield: 4 servings.

Grilled romaine salad

Ingredients
1/2 cup olive oil
3 tablespoons white sugar
1 teaspoon dried rosemary
1 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon ground black pepper
8 Roma (plum) tomatoes, halved lengthwise
2 shallots, halved lengthwise and peeled
1/2 cup balsamic vinegar
2 tablespoons brown sugar
1 3/4 cups olive oil
4 romaine hearts
1 tablespoon olive oil
salt and pepper to taste

DIRECTIONS
Preheat oven to 225 degrees F (110 degrees C). Mix olive oil, white sugar, rosemary, thyme, salt, and pepper in a large resealable plastic bag. Place tomatoes in the bag, seal, and shake to coat. Arrange coated tomato halves cut side up on a baking sheet. Bake tomatoes 2 1/2 hours in the preheated oven. Remove from heat, and let cool.
In a blender or food processor, finely chop the shallots. Add vinegar and brown sugar, and process until smooth. Slowly add 1 3/4 cups oil, processing frequently, so as to thicken the mixture.
Preheat grill for high heat. Brush romaine hearts with 1 tablespoon olive oil, and season with salt and pepper.
Place romaine hearts on the preheated grill. Cook 5 to 10 minutes, turning frequently, until slightly charred but not heated all the way through. Serve warm on salad plates surrounded by tomato pieces and drizzled with the shallot dressing

Slow Cooker Jambalaya

1 pound skinless, boneless chicken breast halves - cut into 1 inch cubes
1 pound andouille sausage, sliced
1 (28 ounce) can diced tomatoes with juice
1 large onion, chopped
1 large green bell pepper, chopped
1 cup chopped celery
1 cup chicken broth
2 teaspoons dried oregano
2 teaspoons dried parsley
2 teaspoons Cajun seasoning
1 teaspoon cayenne pepper
1/2 teaspoon dried thyme
1 pound frozen cooked shrimp without tails

In a slow cooker, mix the chicken, sausage, tomatoes with juice, onion, green bell pepper, celery, and broth. Season with oregano, parsley, Cajun seasoning, cayenne pepper, and thyme.
Cover, and cook 7 to 8 hours on Low, or 3 to 4 hours on High. Stir in the shrimp during the last 30 minutes of cook time.

Orange Pumpkin Loaf

1 large orange
1/3 cup butter, softened
1 1/3 cups white sugar
2 eggs
1 cup canned pumpkin
1/3 cup water
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 cup chopped walnuts
1/2 cup chopped raisins

Preheat oven to 350 degrees F. Grease a 9x5 inch loaf pan.
Cut orange into wedges, and remove seeds. Place orange, peel and all, in a food
processor. Pulse until finely chopped; set aside.
In a large bowl, cream butter and sugar until smooth. Beat in the eggs one at a
time, then stir in the pumpkin, water, and the ground orange. Mix together
flour, baking soda, baking powder, salt, cinnamon, and cloves. Stir into batter
just until moistened. Stir in nuts and raisins. Spoon into the prepared loaf
pan.
Bake for 1 hour in the preheated oven, or until a toothpick inserted near the
center comes out clean. Let stand 10 minutes, then remove from pan, and cool on
a wire rack.
Servings: 12

Breakfast Christmas Tree

2 pkgs. refrigerated crescent rolls
2 Tbsp. melted butter
2 oz. cream cheese
1 c. confectioners' sugar
Red and green sugar
1 tsp. grated orange peel
3 Tbsp. sugar
2 Tbsp. orange juice

Preheat oven to 375 degrees. Slice 2 packages of crescent rolls (do not unroll)
into 11 equal pieces and flatten. On ungreased cookie sheet, arrange 10 pieces
into a triangle to form tree. Use last piece to make trunk. Combine butter,
sugar, and grated orange peel; brush on dough. Bake 20 minutes. Meanwhile, cream
the cream cheese with powdered sugar and orange juice. Brush on baked rolls and
sprinkle with red and green sugar.

Gingerbread Raisin Pancakes

1 c. Whole wheat flour
1/2 c. all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. ground ginger
1/8 tsp. ground cloves
1/4 c. raisins
2 egg whites
1 1/4 c. milk
1/4 c. molasses
2 Tbs. + 2 tsp. vegetable oil
1 tsp. vanilla extract

In a large bowl, combine both flours, baking powder, baking soda, and spices. Mix well. Add raisins. In another bowl, combine remaining ingredients. Beat with a fork or wire whisk until blended. Add to dry mixture, mixing just until all ingredients are moistened. (Don't worry about lumps.) Preheat a nonstick griddle or skillet over medium heat. Oil it lightly or spray with a nonstick cooking spray. Drop batter onto griddle, using 1/4 c. for each pancake. Turn pancakes once, when edges are dry and bottoms are lightly browned. Cook until golden brown on both sides.

Pumpkin Spice Bread

In large bowl mix:
3 c. white sugar
1 c. canola oil
4 eggs
2/3 c. water
2 c. canned pumpkin
1/2 c. light & dark raisins
1/2 c. chopped nuts (walnuts or pecans)

Mix and Add:
3 1/2 c. flour
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg

Mix well and divide into small loaf pans that are well greased: 2 large loaves or 5 small loaves. Bake approx. 45-60 minutes. These will freeze well.

French Onion Burgers

Serving Size : 4

1 pound ground beef
1 can Campbell's French onion soup
4 slices cheddar cheese
4 hard rolls

Shape beef into 4 pattis, 1/2" thick.

Cook patties in skillet until browned. Pour off fat.

Add soup, Heat to a boil. Cover and cook over low heat 5 minuts or until done. Top with cheese.

Ingredients:
1 can (8 ounces) unsweetened pineapple chunks
1 package (14 ounces) breakfast turkey sausage links, cut in half
1 can (8 ounces) whole water chestnuts, drained
1 large sweet red pepper, cut into 1-inch chunks
2 tablespoons honey
2 teaspoons reduced-sodium soy sauce
1/8 teaspoon ground nutmeg
Dash pepper

Directions:
Drain pineapple, reserving 1 tablespoon juice (discard remaining juice or save for another use). Thread sausages, water chestnuts, pineapple and red pepper alternately onto 14 metal or soaked wooden skewers.
In a small bowl, combine the honey, soy sauce, nutmeg, pepper and reserved pineapple juice.
Grill kabobs, uncovered, over medium-hot heat for 6-7 minutes on each side or until the sausages are browned, basting occasionally with marinade. Yield: 14 kabobs.

GROUND BEEF AND MUSHROOM PIE

A crisp, buttery crust tops this ground beef and vegetable pie, baked in a quiche dish. To accompany it, serve a big, leafy green salad, and your favorite fruit sherbet for dessert. For 1 pie, 6 servings, you will need:

1 1/2 lb. lean ground beef, crumbled
2 tbsp. butter
1 can of jar (2 1/2 oz.) sm. whole mushrooms, drained
1/2 lg. onion, finely chopped
1 green or red bell pepper, seeded, chopped
1 clove garlic, minced or pressed
1 tsp. salt
1/2 tsp. dry mustard
1/4 tsp. dried oregano leaves
1 tbsp. all-purpose flour
1/2 c. beef broth
Pastry (recipe follows)
1 egg white, beaten with 1 tsp. water

1. In a large frying pan brown ground beef in butter. Add mushrooms, onion, green or red pepper and garlic. Cook, stirring, until onion is soft.
2. Mix in salt, mustard, oregano and flour. Cook until bubbly. Remove from heat and gradually mix in broth.

3. Spread meat mixture in a 10 inch quiche dish. Cover with pastry, turning edge under and pressing against side of dish. Brush with egg white mixture. If you wish, trim with cut-outs made from pastry trimmings. Pierce top in several places with a fork.

4. Bake at 425 degrees until pastry is golden, 25-30 minutes.

Pastry: Mix 1 cup all-purpose flour with 1/4 teaspoon salt. Cut in 1/4 cup butter and 1 tablespoon lard until mixture forms coarse crumbs. Beat 1 egg yolk with 1 1/2 tablespoons cold water. Add to flour mixture. Stir until pastry clings together. Shape into a ball. Roll out on a floured surface to an 11 inch diameter circle.

Inside-Out Cheeseburgers~

1/4 cup shredded Cheddar cheese
1/4 cup shredded Gruyere cheese
1 pound 90%-lean ground beef
1 tablespoon Worcestershire sauce
1 1/2 teaspoons paprika
1/4 teaspoon freshly ground pepper

Preheat grill to medium-high or preheat the broiler.Combine Cheddar
and Gruyere in a small bowl. Gently mix beef, Worcestershire, paprika
and pepper in a large bowl, preferably with your hands, without
overworking.

Shape into 8 thin, 4-inch-wide patties. Mound 2 tablespoons of the
cheese mixture on each of 4 patties, leaving a 1/2-inch border. Cover
each with one of the remaining patties. Crimp and seal the edges
closed.
*
To grill: Lightly oil the grill rack (see Tip). Grill the stuffed
patties over medium-high heat, about 4 minutes per side for medium-
well. (Be sure not to press the burgers as they cook or they'll split
open and the cheese will ooze out.)
*
To broil: Cover a broiler pan with foil and coat with cooking spray.
Broil the stuffed patties in the upper third of the oven, about 4
minutes per side for medium-well. In either case, let the burgers
stand for 5 minutes before serving.

SPICEY BURGERS:

1 lb ground beef
1 lb bulk pork sausage
1 1/4 Quacker Oats (quick or old fashioned, uncooked)
1/4 cup applesauce
1 egg
1/2 tsp salt

For spicy burgers, combine all ingredients; mix well. Shape to
form 12
patties. Place on rack of broiler pan or over ash covered coals
about 5
inches from the heat. Broil for 5 minutes; turn. Continue broiling
about 4
minutes or until desired doneness.

SAUCE:

1 1/2 cup applesauce
1/4 cup honey
4 tsp prepared mustard
1/4 tsp cinnamon
dash of cloves
Lettuce
6 English Muffins, toasted, split

For Sauce, combine applesauce, honey, mustard and spices; heat. To
serve,
place lettuce leaf on English Muffin half. Top with burger and
sauce.
Sprinkle with toasted sesame seed; if desired.

Maple-Glazed Sweet Potatoes

2 pounds sweet potatoes (4 to 6 medium)
1/3 cup pure maple syrup or maple-flavored syrup
3 tablespoons coarse-grain Dijon-style mustard
2 tablespoons cooking oil
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup cranberries

Peel and cut the sweet potatoes into 1- to 1-1/2-inch chunks.
In a large bowl combine the maple syrup, mustard, oil, salt, and
pepper; add sweet potatoes and cranberries. Toss to coat. Transfer
mixture to a 3-quart baking dish, spreading mixture evenly.

Bake, uncovered, in a 400F oven for 30 to 35 minutes or until
potatoes are glazed and tender, stirring twice.

Open-Face Pizza Sandwiches

2 cups biscuit mix
1/2 cup cold water
1 pound ground beef
1/2 cup grated Parmesan cheese
1/4 cup chopped onion
2 tablespoons chopped green bell pepper
1 teaspoon salt
1 teaspoon dried oregano leaves
1/8 teaspoon pepper
12 ounces tomato paste
2 to 3 tomatoes, thinly sliced
8 slices mozzarella cheese, each
about 4 inches square, cut
diagonally into halves

Preheat oven to 450 degrees F.

Grease cookie sheet. Mix biscuit mix and water until soft dough forms; beat vigorously 20 strokes. Divide dough into halves. Pat each half into a 16 x 4-inch rectangle on a cookie sheet with floured hands. Bake until light brown, 8 to 10 minutes.

Reduce oven temperature to 350 degrees F.

Mix ground beef, Parmesan cheese, onion, green pepper, salt, oregano, pepper and tomato paste; spread over rectangles. Bake until beef is done, 20 to 25 minutes.

Arrange tomatoes down center of each rectangle, overlapping edges; layer mozzarella cheese slices over tomatoes. Bake until cheese is melted, about 5 minutes longer.

Serves 6.

Easy Beef Stuffed Peppers

Serves 4.

1 pound lean ground beef or
1 package fully cooked ground beef
4 medium green, red or yellow bell peppers
3/4 cup chopped onion
1/4 cup uncooked rice
3 tablespoons catsup, divided
1 teaspoon dried oregano leaves, divided
1/2 teaspoon salt
1/4 teaspoon pepper
1 (14 1/2 ounce) can Italian-style stewed
tomatoes, undrained

Cut tops off bell peppers; remove seeds and membrane. Combine ground beef, onion, rice, 2 tablespoons catsup, 1/2 teaspoon oregano, salt and pepper, mixing lightly but thoroughly. Spoon an equal amount of meat mixture into each bell pepper. Place in 8-inch square baking dish.

Combine tomatoes, remaining catsup and remaining oregano; pour over stuffed peppers. Cover baking dish tightly with foil. Bake in 350 degree F oven for 1 1/2 hours.

Easy Tamale Loaf

1 pound ground beef
1 can olives, sliced (optional)
1 can cream style corn
3/4 teaspoon each salt and pepper
1/2 teaspoon chili powder
1 onion, chopped
1 can tomato sauce
1/2 cup cornmeal

Brown ground beef with onion in skillet, stirring until crumbly; drain. Mix in 1/2 cup water and remaining ingredients. Pour into casserole and bake at 350 degrees F for 1 hour.

TEX-MEX CHILI

1 lb. ground beef
2 cloves garlic, minced
3-4 tsp. chili powder
1/2 tsp. ground cumin
1 (15 1/2 oz.) can red kidney beans,
drained
1 c. chopped celery
1 c. chopped onion
1/2 c. chopped green peppers
1 (16 oz.) can tomatoes, cut up
1 (10 oz.) can tomatoes with green
chili peppers
1 c. tomato juice
1 (6 oz.) can tomato paste
1/4 tsp. salt
Shredded Cheddar cheese
Dairy sour cream

Cook beef and garlic until brown. Drain. Stir in chili powder and
cumin. Cook 2 more minutes. Meanwhile, combine beans, celery, onion,
and green pepper. Add undrained tomatoes, undrained tomatoes with
chili peppers, tomato juice, tomato paste and salt. Stir in
browned meat mixture. Cover, cook on low heat for 10-12 hours or on
high heat for 4-5 hours. Ladle chili into soup bowls. Top with
shredded cheese or sour cream. Recommended for cooking in 5 or 6
quart crockpot.

PORCUPINE MEATBALLS

1 lb. ground beef & 1 lb. lean pork
(or all beef)
1 beaten egg
1/2 c. milk
2/3 c. rice
1 tsp. salt

SAUCE:
2 1/2 c. tomatoes (or juice)
2 1/2 c. water
2 tbsp. chopped onion
1 tsp. salt
1 tsp. basil
1 bay leaf

Mix meats; add egg, milk, rice and salt. Form into 1 1/2 inch
balls. Brown in a greased frying pan. Combine tomatoes, water,
onion, salt, basil and bay leaf; bring to a boil; put meatballs in.
Cover; cook slowly for 1 1/2 hours or cook on low in a crockpot until
done (5-8 hours). Take bay leaf out before serving.

CROCKPOT STUFFED PEPPERS

6-8 fresh green peppers
1-2 lb. hamburger
1 onion, sliced
1/4 tsp. salt
1/4 tsp. pepper
1 egg
1 slice white bread
1 can whole tomatoes

Combine hamburger, onion, salt, pepper and egg in large mixing
bowl. Pull apart bread into small pieces and add to hamburger
mixture. Clean and remove seeds and white membrane from green
peppers. Stuff peppers with hamburger mixture. Place peppers into
crockpot and pour tomatoes, undrained, over meat. Cook on low for 6-
12 hours or on high for less than 6. Any remaining meat mixture can
be shaped into small loaf and cooked along with peppers in crockpot.

1 1/2 pound ground beef
1 small very firm tomato, finely chopped
1 medium onion, chopped
1 small green bell pepper,finely chopped
1/2 tsp salt
1/2 tsp freshly ground black pepper, or to taste
1/2 tsp garlic powder
1 1/2 tsp Worcestershire sauce

Pizza Casserole

2 cups Egg Noodles
2 teaspoons Vegetable Oil
1 pound Ground Beef
1/3 cup finely chopped Onion
1 clove Garlic, finely chopped
1 teaspoon Dried Oregano
1/2 teaspoon Coarse Salt
10 3/4 ounces can Condensed Tomato Soup
1/2 cup shredded Mozzarella Cheese

1. Heat oven to 350 degrees.

2. Cook noodles according to package directions. Drain pasta. Set pasta.

3. Heat vegetable oil in skillet over medium heat. Saute beef, onion and garlic, until beef is no longer pink.

4. Drain off excess liquid.

5. Stir in dried oregano, salt, condensed tomato soup, 1/3-cup water, and noodles.

6. Remove from heat and add half of the Mozzarella cheese.

7. Spoon into large baking dish

8. Sprinkle remaining Mozzarella cheese over the top.

9. Bake 30 minutes or until bubbly.

10. Allow 10 minutes to cool, before serving.

FLORIDA TACO

4 lb. ground chuck
3 pkg. taco seasoning
Onions
1 c. water (approximately)
1 sm. can tomato sauce
1 sm. can tomato paste
1 c. uncooked rice

--TOPPING:--

1 c. sour cream
1 pkg. Hidden Valley ranch dressing
1 c. Mayonnaise

Saute meat, taco seasoning and onions. Add remaining ingredients
and cook 6 hours in crockpot. Spread Frito type corn chips on
plate. Top with meat mixture, top with prepared topping and cheese,
lettuce, tomatoes, black olives, salsa, peppers, etc.

Low-Fat Fudge Pops

1 (14 ounce) can fat-free sweetened condensed milk
1/2 cup granulated sugar
1/2 cup baking cocoa
2 1/2 cups skim milk
Artificial sweetener equivalent to 1/2 cup sugar
1 teaspoon vanilla extract
12 (3 ounce) disposable plastic cups
12 Popsicle sticks

In a heavy saucepan, combine the first 3 ingredients; stir until smooth. Bring to a boil over medium-low heat; cook and stir for 1 minute. Gradually whisk in skim milk, whisking until cocoa and sugar are dissolved. Remove from the heat; stir in the sweetener and vanilla.

Pour into cups. Cover each cup with heavy-duty foil; insert sticks through the foil (foil will hold sticks upright). Place in a 13 x 9-inch pan. Freeze until firm, about 5 hours. Remove the foil and cups before serving.

Serves 12.

Mexican Chef Salad

1 head lettuce
4 tomatoes, chopped
1 can black olives, chopped
1 onion, chopped
1 green pepper, chopped
1 1/2 lbs. hamburger, cooked, drained
& cooled1 can kidney beans, drained
1 can garbanzo beans, drained
8 oz. grated cheese
1 bag tortilla chips, crushed

Mix all above ingredients except chips together. Add chips last. Pour dressing over salad.

DRESSING
2 c. mayonnaise
12 oz. (or less) green taco sauce, mild
1 tsp. lemon juice
1 tsp. vinegar

Mix ingredients together and pour over salad.

Taco Dip

1 lb. hamburger
1 pkg. taco seasoning
1 can refried beans
1 (8 oz.) carton sour cream
Hot taco sauce to taste
1 can sliced or chopped black olives
1/4 - 1/2 lb. cheddar cheese, grated
1/4 - 1/2 lb. Monterey Jack cheese, grated

Brown the hamburger; drain and add the taco seasoning. Spread the mix in the bottom of a 9" square baking dish. Layer the remaining ingredients in order given on top of hamburger. Bake at 350 degrees for 30 minutes or until heated through. Serve with crisp tortilla chips.

Brownie Fudge

4 (1 oz.) squares unsweetned chocolate, chopped
1 cup butter
3/4 cup sugar
1 cup brown sugar
4 eggs
1 cup flour
1/2 tsp. baking powder
1 cup chopped walnuts or pecans
2 tsp. vanilla
3/4 cup butter
1-2/3 cups light cream
2 cups sugar
2 cups brown sugar
7 oz. jar marshmallow creme
12 oz. pkg. semisweet chocolate chips
12 oz. pkg. special dark chocolate chips
2 tsp. vanilla

Preheat oven to 350 degrees. Spray a 13x9" pan with nonstick baking spray containing flour and set aside. Melt 4 oz. chocolate and 1 cup butter in heavy saucepan over low heat, stirring until smooth. Beat in 3/4 cup sugar and 1 cup brown sugar, then add eggs and beat until smooth.
Add flour, 1 cup walnuts and 2 tsp. vanilla to chocolate mixture and stir just until combined. Spread brownie batter into prepared pan and bake at 350 degrees for 20-30 minutes until just set. Don´t overbake! Start making Fudge Topping as soon as the brownies go into the oven.

For Fudge Topping, melt 3/4 cup butter and light cream in large saucepan over medium heat. Add 2 cups sugar and 2 cups brown sugar and stir well; bring to a boil over medium heat, stirring constantly. Boil for 5 minutes, stirring constantly and scraping the bottom and edges of the pan with the spoon.. This mixture burns easily, so be sure to keep stirring!

Remove pan from heat and add marshmallow creme, semisweet and dark chocolate chips, and 2 tsp. vanilla. Beat until smooth.

Remove brownies from oven when done and immediately pour Fudge Topping over hot brownies. Cool in pan on wire rack and then place in the refrigerator until firm, about 3 hours. Cut into 1" squares to serve.

Yields about 120 squares

"A lightly sweet zucchini bread with walnuts and apples."
Ingredients:
4 eggs
1 cup white sugar
1 cup brown sugar
1/2 cup vegetable oil
1 teaspoon vanilla extract
3 1/2 cups all-purpose flour 1 1/2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 cup chopped walnuts
2 cups peeled, chopped zucchini
1 cup chopped, peeled apple

Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease 2 - 9x5 inch loaf
pans.
2. In a large bowl, combine eggs, white sugar, brown sugar, oil and vanilla
until well blended. In a separate bowl, combine flour, baking soda, salt and
cinnamon. Stir flour mixture into egg mixture. Fold in walnuts, zucchini and
apple. Pour into prepared pans.
3. Bake 1 hour, or until top springs back when touched lightly in center.
Let cool in pans 10 minutes before removing to wire rack to cool completely.

banana cake

INGREDIENTS:


1 cup ripe bananas (3 medium sized)

3/4 cup oil

1/2 cup sugar

1 (18-1/2 ounce) box yellow cake mix

5 eggs

1 teaspoon vanilla

3 tablespoons brown sugar

1/2 cup chopped pecans

1 teaspoon cinnamon

TO PREPARE:

Put bananas and oil in blender and liquefy. Add this mixture and sugar to cake mix. Beat thoroughly in electric mixer. Add eggs one at a time, beating well after each addition. Add vanilla. Combine brown sugar, pecans and cinnamon. Pour half of batter into greased and floured bundt pan. Sprinkle sugar, nuts and cinnamon mixture over batter. Pour remaining batter into pan. Bake at 350 degrees for about 1 hour.

White Chocolate Snack Mix

1 (10 ounce) package mini twist pretzels
5 cups toasted oat cereal
5 cups crispy corn cereal squares
2 cups salted peanuts
1 (14 ounce) package candy-coated milk
chocolate pieces
2 (11 ounce) packages white chocolate
chips
3 tablespoons vegetable oil

Line 3 baking sheets with waxed paper or parchment. Set aside.
In a large bowl, combine mini pretzels, toasted oat cereal, crispy corn cereal squares, salted peanuts, and candy-coated chocolate pieces. Set aside.
In a microwave-safe bowl, heat chips and oil on medium-high for 2 minutes, stirring once. Microwave on high for 10 seconds; stir until smooth. Pour over cereal mixture and mix well.
Spread onto prepared baking sheets. Cool; break apart. Store in an airtight container.

Ingredients:
3 bananas
6 wooden ice-cream sticks
1 cup orange juice
1 cup milk-chocolate pieces
2 tablespoons vegetable oil
3/4 cup chopped peanuts (optional)
3/4 cup shredded coconut (optional)

Directions:
Cover baking sheet with waxed paper; set aside. Slice peeled
Bananas in half crosswise and insert stick. Dip into orange
Juice. Place in freezer until firm. Melt chocolate pieces
And vegetable oil in top of double boiler. Spoon melted
Chocolate evenly over bananas. Chocolate will harden fast,
So work rapidly. Roll coated bananas in chopped peanuts or

And freeze.

Oatmeal Raisin Cookies




Ingredients
Makes 3 dozen medium-size cookies
1/2 cup (1 stick) unsalted butter, room temperature
1 cup packed dark-brown sugar
1/4 teaspoon salt
1 large egg
1 teaspoon pure vanilla extract
3/4 cup all-purpose flour
2 cups quick-cooking oatmeal (not instant)
1 teaspoon ground cinnamon
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon freshly ground nutmeg
1/2 cup raisins
Directions
Preheat oven to 350 degrees. Line two baking sheets with parchment paper; set aside.
In a large bowl, using a spatula, cream together butter, sugar, and salt. Add egg, vanilla, and 1/4 cup water; mix until well combined.
In another large bowl, mix together flour, oatmeal, cinnamon, baking powder, baking soda, and nutmeg. Fold into the butter mixture until well combined. Add raisins and stir until well combined.
Using a 1 1/2-inch ice cream scoop, scoop out cookie dough onto prepared baking sheets, about 1 1/2 inches apart. Transfer baking sheets to oven, and bake until edges begin to brown, about 20 minutes. Let cookies cool on baking sheet for about 10 minutes before transferring to a wire rack to cool completely.

PEACHES 'N CREAM NO BAKE CHEESECAKE

2 cups graham cracker crumbs
6 tbs margarine, melted
1 cup sugar
4 pkgs 8 oz each Neufchatel cheese, softened
3 oz pkg peach flavor gelatin
15 oz can sliced peaches in juice, drained, chopped
8 oz tub Cool Whip whipped topping, thawed

Mix graham crumbs, margarine and 1/4 cup sugar, press into bottom of 13x9" pan. Refrigerate. Beat Neufchatel cheese and remaining sugar in bowl until blended. Add gelatin mix, mix well. Stir in peaches and Cool Whip. Spoon over crust, cover. Refrigerate 4 hours or until firm. SUBSTITUTE---PREPARE USING 2 CHOPPED FRESH PEACHES. Makes 16 servings of Cheesecake.*

This excellent cold pizza is great for a hot summer day when you can't stand the thought of facing the stove.
Prep Time: 20 minutes
Ingredients:
1/2 cup cream cheese with chives, softened
1/4 cup mayonnaise
2 Tbsp. Horseradish sauce
1 prepared Boboli® pizza crust
1-1/2 cups chopped cooked ham
1-1/2 cups chopped plum tomatoes
1/2 cup shredded lettuce
1/4 cup creamy Italian salad dressing
Directions:
In small bowl, combine cream cheese, mayonnaise, and horseradish sauce and blend well. Spread over the pizza crust. Top with ham, plum tomatoes, and lettuce and drizzle with salad dressing. Cut into wedges and serve immediately.

Cobb Salad Wraps

You can use other vegetables in this easy no cook sandwich wrap recipe. Try sliced red or green peppers or thinly sliced summer squash. You can make the filling ahead of time and store it in the fridge until you're ready to make the sandwiches.
Prep Time: 35 minutes
Ingredients:
2 cups cubed cooked chicken
1/3 cup chopped green onion
1 tomato, seeded and chopped
1 avocado, peeled and chopped
1/3 cup red wine vinaigrette salad dressing
1 Tbsp. Dijon mustard
6 (10") flour tortillas
1-1/2 cups shredded fresh spinach
1 cup crumbled blue cheese
Directions:
Combine chicken, green onion, tomato and avocado in medium bowl and gently mix. In small bowl, combine salad dressing and Dijon mustard and whisk to blend. Add to chicken mixture and stir to coat.
When ready to serve, spoon chicken mixture into each tortilla. Top with spinach and blue cheese. Fold up bottom edge and fold in sides, and serve.

Very moist and delicious!
Ingredients:
1 (18-1/2 oz.) Pkg. Yellow cake mix
1 (20 oz.) Can crushed pineapple
1 cup sugar
1 (6 oz.) Pkg. Vanilla pudding mix
1 cup whipping cream, whipped and sweetened
Flaked coconut, lightly toasted
Directions:
Prepare cake in 13x9" baking pan and bake according to package directions. Combine pineapple and sugar in saucepan and bring to a boil. Cool slightly. When cake is done, remove from oven.
Poke holes in it with a fork. Pour pineapple syrup into holes. Set aside to cool. Prepare pudding mix according to package directions. Cool. Spread prepared pudding over top. Chill.

Apple-Cinnamon Cake

1 package Betty Crocker SuperMoist spice cake mix
1 can (21 ounces) apple pie filling
3 eggs
3 tablespoons sugar
1 teaspoon ground cinnamon
Whipped topping

Preheat oven to 350 F. Grease (or lightly spray with cooking spray) bottom only of 13x9-inch rectangular pan.
Beat cake mix (dry), pie filling and eggs in large bowl on low speed 2 minutes. Spread half of the batter in pan. Mix sugar and cinnamon; sprinkle half of the mixture over batter in pan. Spread remaining batter in pan; sprinkle with remaining sugar-cinnamon mixture.
Bake 30 to 35 minutes or until toothpick inserted in center comes out clean; cool. Serve with whipped topping.
High Altitude (3500-6500 ft): Stir 3 Tbsp all-purpose flour into dry cake mix. Bake 40-45 min.

HOLIDAY SUNRISE

3 oz orange flavored vodka
4 oz cranberry juice blend
1 oz grenadine liqueur or syrup
1 oz orange juice
2 tsp lemon or lime juice

In a pitcher, blend together vodka, cranberry juice, grenadine, orange juice and lemon juice. Add 1 cup ice and stir to chill. Strain into two 8 oz glasses. Garnish with lemon or lime peel and serve immediately. THIS RECIPE CAN BE EASILY DOUBLED OR TRIPLED. Makes 2 cocktails.*

PARMESAN CRUSTED CHICKEN

12 multigrain saltine crackers
1/4 cup grated Parmesan cheese
2 tbs finely chopped parsley
1/2 tsp dried basil
1/2 tsp paprika
1/8 tsp each salt and pepper
1/4 cup buttermilk
4 boneless skinless chicken breasts

Heat oven to 400 degrees. Place baking rack on a baking sheet, set aside. Place crackers in a plastic bag and crush. Add Parmesan, parsley, basil, paprika, salt and pepper to bag, shake to combine. Pour crumbs into shallow pie plate, set aside. Place buttermilk in a shallow pie plate. Dip chicken in the buttermilk, then coat both sides of chicken in cracker mixture. Place chicken on rack on baking sheet and bake 30 min. or until done. SERVE IMMEDIATELY. Makes 4 servings.*

Pork Chop Casserole

Ingredients:
4 boneless pork chops
1/4 tsp Italian seasoning
1/4 tsp pepper
2 large potatoes, peeled and sliced 1/4 inch thick
1 medium onion, chopped
3 TBL margarine
1 TBL chopped green pepper

Directions:
Sprinkle chops with Italian seasoning and pepper. Arrange in the center
Of a 13-in. X 9 in baking dish that has been coated with cooking spray.

Place one layer of potatoes around chops, sprinkle with half of onion.
Dot with 1 TBL margarine. Repeat layers. Sprinkle with green pepper.

Cover and bake 325 for 45 minutes. Uncover and bake 20-25 minutes
Longer.

Applesauce Brownies
Ingredients:
1/2 cup shortening
1 tsp. Cinnamon
2 eggs
1 can applesauce
2 cups flour
1 1/2 tsp. Soda
1/2 tsp. Salt
1 1/2 cups sugar
2 Tbsp. Cocoa
Topping:
3 Tbsp. Sugar
1 pkg. Chocolate chips
1/2 cup chopped pecans
Directions:
Combine all ingredients and mix well. Put in greased 17x11 inch pan.
Sprinkle topping ingredients over brownie mix and bake at 350 degrees F for 20 minutes.

Hot Cappuccino Float

Ingredients:
1/4 cup fat free no-sugar-added vanilla ice cream
1 envelope General Foods International Coffees Sugar Free Cappuccino, any flavor 1 cup hot fat free milk

Directions:
Place ice cream in large cup or mug. Prepare Cappuccino as directed on package, substituting hot milk for the water. Pour over ice cream. Serve immediately.

Creamy Fruit Salad
Ingredients:
6 crisp apples
6 oranges
1 lb. Seedless grapes
1 large can peaches, drained, save juices
1 large can pineapple, drained, save juices
1 can sweetened condensed milk
Directions:
Basically use the fruits you love. Core, peel, chunk apples into a large bowl. Follow with sliced orange sections over the apples to keep them from browning. Wash grapes and add the rest of the fruits to the bowl.
Pour the condensed milk into a medium bowl. Add about 1/2 of the saved juices from peaches and pineapple and stir. Pour and mix into the fruits-will be runny. Save your remaining juices. Use saran wrap to cover tightly and let sit in refrigerate at least 4 hours. The fruits will absorb the juices and will thicken.
This is when you can add more juice if you prefer it wetter or use your juices for something else.

Awesome Baked Meatballs

2 eggs, beaten
2 cups fresh breadcrumbs, soaked in 1 cup milk
1 cup shallots, minced
4 garlic cloves, minced
1/2 cup snipped fresh parsley
1 teaspoon salt
1/2 teaspoon dried thyme, crushed
1/2 teaspoon pepper
1/2 cup grated parmesan cheese
1 lb meatloaf mixture (ground pork, veal, beef)
1 lb ground beef or ground turkey

In a small frying pan, place 1-2 T. oil in pan. Saute on a medium heat the shallots and garlic until lightly brown and transparent. In a large mixing bowl, combine eggs, soft breadcrumbs parsely, salt and pepper, thyme and parmesan cheese and milk together. Let stand so breadcrumbs can absorb milk. Add sauted shallots and garlic and then add meat mixture. Mix, but don't overmix. Form into meatballs and place on a jelly roll pan lined with foil (I use Release Foil, so I don't have to spray with a non-stick spray - if you don't have Release Foil, spray your foil with non-stick spray). Place meatballs in 350 degree oven for approximately 20-25 minutes. Let cool on wire rack and either place in freezer container or use as needed. Yield -

Dinner in a Pumpkin

1 small to med. pumpkin
2 tbsp vegetable oil
2 tbsp soy sauce
1 1/2 c. cooked rice
1 (4oz.) can sliced mushrooms, drained
1 (10 3/4 oz.) can cream of chicken soup
1 (8oz.) can sliced water chestnuts, drained
1 onion, chopped
1 1/2 - 2 lbs. ground beef
2 tbsp brown sugar

Cut off the top of the pumpkin and thoroughly clean out seeds and pulp. Paint an appropriate face on the front with a permanent marker. Preheat oven to 350. In a large skillet, sauté onions in oil till tender. Add meat and brown. Drain drippings, add soy sauce, brown sugar, mushrooms and soup. Simmer 10 minutes, stirring occasionally. Add cooked rice and water chestnuts. Spoon mixture into the cleaned pumpkin shells. Replace top and place entire pumpkin with filling on a baking sheet. Bake 1 hour or until inside of pumpkin is tender. Cooking time may vary up to 2 hours, depending on size of pumpkin. Place entire pumpkin on serving platter, remove lid and serve mixture plus meat of the pumpkin.

BEEF QUESADILLA PIE

1 pound ground beef
1 cup salsa
1/4 cup ripe olives
1 can green chiles -- chopped
1 package pie crust -- 2 crust
1 1/2 cups cheddar cheese -- grated

brown beef in a large skillet.
Drain.
Stir in salsa, olives and chilies.

Place one pie crust on ungreased cookie sheet.
Spoon hamburger mixture evenly onto crust to within 3/4" of the edge.
Sprinkle cheese over beef.
Moisten edge of crust with a little water.
Put the other crust on top and seal the edges with a fork.
Cut several slits in top to allow steam to escape.

Bake at 425 degrees for 17-27 minutes or until crust is
golden.

Serve with optional toppings--any or all!

Shredded lettuce

sour cream
ripe olives

Cotton Candy Sugar Cookies

1 cup granulated sugar
1 cup powdered sugar
1 cup butter
1 cup vegetable oil
2 eggs
1 teaspoon vanilla
1 teaspoon salt
1 teaspoon cream of tartar
1 teaspoon baking soda
4-1/4 cups flour
Extra sugar for pressing cookies (Use red and green for Christmas cookies)

Preheat oven to 375 degrees F.
Cream together the granulated sugar, powdered sugar, butter, and cooking oil. Beat in eggs and vanilla.

Add dry ingredients, (the next four ingredients) and mix to incorporate. Roll dough into small balls about the size of a quarter. With a heavy bottomed crystal vase with a decorative bottom, or other cookie press, dip in sugar to coat well. Smash each ball of dough so they are spread out and flat. Leaving an imprint and sugar. Bake in a 375 degree oven for 10 minutes, until the edges just start to turn slightly brown. Do not bake too long. Cool sugar cookies on the baking sheet briefly then transfer to wire rack to cool the rest of the way.

PIZZA BURGERS

6 hamburger buns
1 lb. hamburger
6 slices of American cheese
1 cup of shredded mozzarella cheese
1 1/2 jar of pizza sauce
garlic salt
pepper

Preheat oven to 350.
Separate buns in half. Place on baking sheet. Ground hamburger in large skillet. Drain.

Add pizza sauce and mix together. Spread 1 tsp. of hamburger mixture on each bun.

Cut cheese slices in half and put on buns. Add 1 tbsp. of hamburger mixture on top of cheese.

Sprinkle each with mozzarella cheese to top. Add a dash of garlic salt and pepper.

Bake about 15 minutes. Feeds about 6-8 people

GROUND BEEF DIRTY RICE

1 1/4 lbs. ground beef
1/2 c. diet butter
2 c. instant rice
1 (10 oz.) can French onion soup
1 can water
4 oz. can drained mushrooms
1 tbsp. creole seasoning

In a medium pan, saute ground beef until brown. While meat is browning, in large skillet melt butter. Add uncooked rice. Stir until brown, about 6 minutes. When rice is brown, add onion soup, water, mushrooms and seasoning. Drain meat, mix with rice mixture. Bring to boil. Turn off heat, cover and let stand 10 minutes.

HEARTY GROUND BEEF & VEGETABLE SOUP

1 lb. ground beef
1 c. chopped onion
2 cans (16 oz.) tomatoes
4 c. hot water
2 beef bouillon cubes
1 tbsp. salt
1/8 tsp. pepper
1/2 bay leaf
1 c. sliced celery
1/2 tsp. Worcestershire sauce
1 tbsp. sugar
1 c. uncooked noodles
1 pkg. frozen mixed vegetables
1/4 tsp. basil

Brown ground beef and onions. Add tomatoes, water, bouillon cubes, salt, pepper, bay leaf, celery, Worcestershire sauce and sugar. Bring to boil, cover and simmer 30 minutes. Add noodles, vegetables and basil. Bring to boil and simmer for 15-20 minutes. Serves 8.

Cheeseburger Bites

1 Egg yolk -- beaten
1/2 pound Lean ground beef
2 tb Grated onions
1/2 t Salt
1 dash pepper
6 slices Bread
2 cups Cheddar cheese, cut into cubes

In a bowl, combine egg yolk, ground beef, onio , salt and pepper. Shape mixture by teaspoonfuls into 24 balls. Remove crusts from bread; roll flat and cut into 1 - 1/2 inch rounds. Place meatballs on bread rounds; make a depression in each ball and fill with a cube of cheese, making sure bread is coverd with meat mixture. Place on baking sheet. Broil in preheated oven about 5 inches from heat 3 - 5 minutes or until no pink remains. Garnish with ketchup, mustard, sliced green onions or sliced dill pickles if desired

Crockpot Pot Roast Dinner

This classic recipe is a meal in one dish. All you need is a crisp green salad and some toasted garlic bread.
Prep Time: 25 minutes
Cook Time: 10 hours

Ingredients:
•1 Tbsp. Flour
•1 tsp. Salt
•1/8 tsp. Pepper
•1/2 tsp. Dried thyme leaves
•1-1/2 lb. Boneless beef top round cut into 6 pieces
•1 Tbsp. Olive oil
•4 potatoes peeled cut into chunks
•16 oz. Pkg. Baby carrots
•14 oz. Can ready to serve beef broth
•1 tsp. Worcestershire sauce
•2 Tbsp. Cornstarch

Directions:
Combine flour, salt, pepper and thyme in small bowl and coat beef with this mixture. Cook beef pieces in olive oil in a nonstick skillet for 2-3 minutes on each side to brown. Set aside.
Combine potatoes, carrots and onion in 3-4 quart slow cooker. Place meat on vegetables. Pour beef broth and Worcestershire sauce over meat. Cover crockpot and cook on low for 8-10 hours until beef is tender.

Remove meat and vegetables from crockpot and place on serving platter. Cover with foil to keep warm and place in slow oven. Combine rest of broth and the cornstarch in a small bowl and mix well with wire whisk. Add to liquid in crockpot turn to high and cook for 10-15 minutes until gravy is thickened. Serve with beef and vegetables.

Bourbon Walnut Pie

Crust:
2 cups all purpose flour
1 teaspoon sugar
1/4 teaspoon salt
3/4 cup (1 1/2 sticks) chilled unsalted butter, cut into 1/2-inch pieces
1 large egg
1 tablespoon milk

Filling:
1 cup dark corn syrup
1/2 cup sugar
3 large eggs
2 tablespoons (1/4 stick) unsalted butter, melted
2 tablespoons bourbon
1 1/2 tablespoons all purpose flour
1 teaspoon vanilla extract
1/4 teaspoon salt
3/4 cup chopped walnuts (about 3 ounces)
3/4 cup walnut halves (about 3 ounces)

For Crust: Blend flour, sugar and salt in processor. Add butter
and process using on/off turns until mixture resembles coarse meal.
Whisk egg and milk in small bowl to blend, then add to processor.
Blend until moist clumps form. Gather dough into ball and flatten
into disk. Wrap dough in plastic and refrigerate 1 hour.

For Filling: Preheat oven to 350°F. Whisk syrup, sugar, eggs,
butter, bourbon, flour, vanilla and salt in large bowl to blend.
Mix in all walnuts.

Roll out dough on floured surface to 14-inch round. Transfer to
9-inch-diameter glass pie dish. Fold edge under; crimp decoratively.
Pour filling into prepared crust. Bake until crust is golden and
filling is set in center when pie is shaken slightly, about 55
minutes. Cool pie completely in pan on rack.

Mrs. Fields Eggnog Cookies

2 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 1/4 cups sugar
3/4 cup butter
1/2 cup eggnog
1 teaspoon vanilla
2 egg yolks
1 tablespoon nutmeg

Preheat oven to 300F. In a medium bowl combine flour, baking
powder, cinnamon and nutmeg. mix well with a wire whisk and
set aside.

In a large bowl, cream sugar and butter with an electric mixer
to form a grainy paste. Add eggnog, vanilla and egg yolks and beat
at medium speed until smooth. Add the dry ingredients and beat
at low speed just until combined. Do not overmix.

Drop by rounded teaspoons onto ungreased baking sheets, 1" apart.
Sprinkle lightly with nutmeg. Bake for 23-25 minutes or until
bottoms turn light brown. Transfer to cool, flat surface
immediately with spatula.

Mexican Christmas Salad

6 small canned beets
1 medium navel orange, peeled with white membrane removed
1 medium red apple, cored (peel intact)
1/4 fresh pineapple, about 2 ounces, peeled
1/4 cup minced red onion
6 cups mixed salad greens, rinsed and crisped
2 tablespoons olive oil
2 tablespoons red wine vinegar
2 tablespoons fresh orange juice
1 cup fresh pomegranate seeds
1 tablespoon chopped dry-roasted peanuts

Thinly slice the beets, orange, and apple. Cut the pineapple into small cubes and toss with red
onion. Put salad greens in a large salad bowl. Arrange a ring of orange slices alternating with apple
slices around the outer edge, then the beet slices, piling the pineapple-onion mixture in the center.

In a small bowl, whisk together olive oil, vinegar, and orange juice. Drizzle evenly over salad.
Do not toss. Top with pomegranate seeds and sprinkle chopped peanuts over all. Serve at once,
tossing as you serve. Makes 6 servings.

Holiday Cherry Shortcake

21 oz. cherry pie filling
1 cup powdered sugar
8 oz. fat-free cream cheese, softened
8 oz. Cool Whip Free, thawed
1/4 cup walnuts, chopped
13 oz. angel food cake, cubed

In a large mixing bowl, combine powdered sugar, cream cheese, whipped topping and walnuts.
Mix well. Fold in cake cubes. In a serving bowl, pour half of the cake mixture. Pour half of the cherry filling on top of the cake mixture. Repeat layers until all ingredients have been used.
Chill 3 hours before serving.

Cinnamon Sour Cream Coffee Cake

1 cup fruit-based fat replacement or unsweetened applesauce
2 1/2 cups granulated sugar, divided use
2 teaspoons pure vanilla extract
1 cup liquid egg substitute
3 cups unbleached all purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups fat-free dairy sour cream
2 tablespoons ground cinnamon
1/2 cup chopped walnuts, toasted

Heat oven to 350F. Grease a 10-inch tube pan. In large mixing bowl, combine fat replacement and 2 cups sugar;
beat until fluffy. Stir in vanilla. Add liquid egg substitute, 1/4 cup at a time, beating after each addition.

In another bowl, combine flour, baking powder, baking soda and salt; add alternately with sour cream to other
mixture, beating enough after each addition to keep batter smooth. Spoon 1/3 batter into prepared pan.

In a bowl, combine cinnamon, nuts and remaining sugar. Sprinkle 1/3 of the mixture on batter in pan. Repeat
layers of batter and cinnamon mixture 2 more times.

WARM LEMON CAKE Makes: 16 servings

1 (18.25 ounce) package yellow cake mix
2 cups cold milk
1 1/4 cups water
2 pkg. (4 serving size) JELL-O Lemon Flavor Instant Pudding & Pie
Filling
1/3 cup granulated sugar
2 tablespoons powdered sugar
1 pint raspberries

Preheat oven to 350 degrees F. Prepare cake batter as directed on
package. Pour into greased 13x9-inch baking dish; set aside. Pour milk
and water into large bowl. Add dry pudding mixes and granulated sugar.
Beat with wire whisk 2 min. or until well blended. Pour over cake
batter. Place baking dish on baking sheet to catch any sauce that
bubbles over side of dish as dessert bakes. BAKE 55 min. to 1 hr or
until wooden toothpick inserted in center comes out clean. Cool 20 min.
(Sauce will thicken slightly as it cools.) Sprinkle with powdered sugar.

MOZZARELLA BEEF BURGERS Makes: 4 servings, one burger each

1 lb. ground beef
1/2 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
1/2 cup fresh bread crumbs
1/4 cup Barbecue Sauce, divided
4 hamburger buns

PREHEAT grill to medium-high heat. Mix meat, cheese, bread crumbs and 2
Tbsp. of the barbecue sauce. Shape into four patties.
PLACE patties on grill; cover grill with lid. Grill 4 to 6 min. on each
side or until burgers are cooked through (160°F), brushing with
remaining 2 Tbsp. barbecue sauce during last 2 min. of grilling
time. FILL buns with burgers and lettuce, if desired.

PUMPKIN-GINGER PIE WITH GOLDEN MARSHMALLOW TOPPING

Fresh ginger perks up a pumpkin pie, and a streusel layer adds crunch
under a toasted marshmallow topping. Makes: 8 servings

Crust
1 Pillsbury® refrigerated pie crust (from 15-oz box), softened as
directed on box

Streusel
1/2 cup crushed gingersnap cookies (9 cookies)
1/4 cup chopped pecans
2 tablespoons packed light brown sugar
2 tablespoons all-purpose flour
2 tablespoons butter or margarine, softened

Filling
1 can (15 oz) pumpkin (not pumpkin pie mix)
1 cup evaporated milk
1/2 cup packed light brown sugar
2 teaspoons grated fresh gingerroot
1 teaspoon pumpkin pie spice
1/4 teaspoon salt
2 eggs, slightly beaten

Topping
2 to 2 1/2 cups miniature marshmallows

Heat oven to 425°F. Place cookie sheet on middle oven rack. Unroll pie
crust in 9-inch glass pie plate as directed on box for One-Crust Filled
Pie. In small bowl, mix streusel ingredients. Sprinkle streusel in
crust-lined pie plate. 2. In large bowl, mix filling ingredients. Pour
into pie crust on top of streusel. Place pie plate on cookie sheet in
oven. Bake 15 mins. Reduce oven temp to 350°F. Bake 35 to 45 mins
longer or until knife inserted in center comes out clean. Cool
completely on cooling rack, about 3 hrs. 3. Just before serving, set
oven control to broil. Spread marshmallows evenly over top of pie,
completely covering filling. Broil pie with top about 5 inches from heat
about 30 seconds, watching carefully, until marshmallows are lightly
browned. Marshmallows will brown quickly. Cover and refrigerate any

Angel Drops

2 Egg whites
1/4 ts Salt
1 ts Vanilla
3/4 c Sugar
1/2 c Dates, chopped
1 c Nuts, chopped
1 tb Flour

Preheat oven to 350 degrees F.

Beat egg whites until soft peaks form. Add salt and vanilla. Gradually add sugar, beating until stiff peaks form. Sprinkle dates and nuts with flour and fold into egg whites.

Drop by teaspoon on greased cookie sheet. Bake for 10 to 12 minutes.

Strawberry Jello Mousse

Main Ingredients:

Jell-O Strawberry: 1 packet , 170g
Vanilla Ice cream: 2 cup
Hot water: 2 cups
Diced fruits: ( strawberry, raspberry, apples..) optional
Marshmallow: optional

Directions:

1. Bring tow cups of water to boil.

2. Dissolve the Jell-O powder in the boiling water.

3. Add the ice cream and mix well.

4. Arrange the fruits in your serving cups and fill with the ice cream
mixture.

5. Chill in the fridge for at least an hour.

6. Decorate with chocolate syrup and marshmallows.

Cheeseburger Pot Pie

1 ready to bake pie crust
1 1/2 lb. lean ground beef
1/4 C. chopped onion
3/4 C. ketchup
2 T. chopped pickle, if desired
1/8 t. pepper

4 oz. (1 cup) shredded sharp Cheddar cheese

Heat oven to 450°F. Let pie crust pouch stand at room temperature for 15 to 20 minutes. Meanwhile, brown ground beef in large skillet over medium-high heat until thoroughly cooked, stirring frequently. Drain.

Reduce heat to medium. Add onion; cook 5 to 8 minutes until onion is tender, stirring occasionally. Add ketchup, pickle and pepper; mix well. Cook 2 to 3 minutes or until thoroughly heated.

Spoon beef mixture into ungreased 9-inch pie pan. Sprinkle with cheese. Unfold pie crust; press out fold lines. Place crust over hot beef mixture. Flute edges; cut slits in several places in crust.

Bake at 450°F. for 13 to 20 minutes or until crust is golden brown and filling is bubbly. Cover edge of crust with strips of foil during last 10 minutes of baking to prevent excessive browning.

Makes 6 servings

Banana Chocolate Chip Pops

1c 1% low-fat chocolate milk
2 small bananas, peeled & cut into chunks
1 8oz carton coffee flavored low-fat yogurt
3 tbsp. semi-sweet chocolate mini-morsels
8 paper cups (3oz) 8 wooden sticks

1. Combine first 3 ingredients in container of an electric blender or food processor; cover and process until smooth.

2. Stir in chocolate morsels. Pour mixture evenly into paper cups. Cover tops of cups with aluminum foil, and insert stick through foil into center of each cup. Freeze at least 4 hours. To serve, remove foil, and peel paper cup away from each pop.

Yield 8 pops.

Ingredients:
1 loaf (1 pound) French bread
1 cup prepared pesto
1 pound thinly sliced deli turkey
1/2 pound provolone cheese, thinly sliced
2 small zucchini, thinly sliced
2 medium tomatoes, thinly sliced
1 medium red onion, thinly sliced

Directions:
Cut the top fourth off loaf of bread. Carefully hollow out the bottom, leaving a 1/2-in. shell. (Discard removed bread or save for another use.) Spread pesto on the inside of top and bottom of bread. Set top aside.
In bottom of bread, layer the turkey, cheese, zucchini, tomatoes and onion. Gently press the layers together. Replace bread top and wrap tightly in foil. Place on a baking sheet. Bake at 350° for 25-30 minutes or until heated through. Let stand for 10 minutes before cutting. Yield: 6 servings.

Ingredients:
6 Italian sausage links (4 ounces each)
1 bottle (14.9 ounces) dark beer or nonalcoholic beer
2 cups julienned green peppers
1 cup sliced onion
2 teaspoons minced garlic
2 tablespoons olive oil
1/2 cup chopped fresh tomato
3/4 teaspoon salt
1/2 teaspoon pepper
6 brat buns, split
6 slices provolone cheese, halved

Directions:
Place sausages in a large saucepan; add beer. Bring to a boil. Reduce heat; cover and simmer for 8-10 minutes or until meat is no longer pink.
Meanwhile, in a large skillet, saute the green peppers, onion and garlic in oil until tender. Add the tomato, salt and pepper; heat through.
Drain and discard beer. Grill sausages, covered, over direct medium heat for 4-5 minutes or until browned, turning occasionally. Serve on buns with green pepper mixture and cheese. Yield: 6 servings.

TENNESSEE BURGERS

1 lb. ground chuck
1/4 c. quick cooking rolled oats
2 tbsp. catsup
2 tbsp. milk
1 tbsp. mustard
1 slightly beaten egg
Salt
1 tsp. monosodium glutamate ( I omit this!)
1/4 tsp. liquid smoke
4 thin slices onion
1/4 c. drained pickle relish
1 recipe cheese sauce

Thoroughly combine meat, oats, catsup, milk, mustard, egg and seasonings; shape into 4 burgers. Grill over hot coals about 8 minutes; turn, top each with onion slice and mound of pickle relish and cook 7 more minutes until done. Place on buns, top with cheese sauce. In sauce pan, mix 1/3 cup process cheese spread, 2 tablespoons mayonnaise and 1 tablespoon prepared mustard, heat at side of grill.

TURKEY CORNMEAL BURGERS WITH SALSA

1 pkg. (about 1 4/ lb.) turkey store fresh ground turkey
2 tbsp. cornmeal
1 tbsp. lime juice
1 egg white
2 tsp. cumin, optional
2 tsp. chili powder
1/2 tsp. salt, optional
1/4 tsp. pepper
1 jalapeno pepper, seeded, finely chopped
1 tbsp. vegetable oil
1 c. frozen whole kernel corn, cooked, drained
1/2-3/4 c. salsa or picante sauce

In medium bowl combine ground turkey, cornmeal, lime juice, egg white, cumin, chili powder, salt, pepper and jalapeno pepper. Mix together lightly; shape into 5 patties.
Heat oil in 10 inch skillet over medium-high heat until oil sizzles, about 1 minute. Place patties in pan. Cook about 3-5 minutes on each side or until patties are no longer pink in center.

Meanwhile, in small saucepan, combine and heat corn and salsa. Serve with turkey burgers. If desired, serve hot cornbread on the side. 5 servings.

MUSHROOM BEEF BURGERS

1 1/2 c. Rice Krispies
1 egg
1/2 tsp. salt
1/2 tsp. pepper
1 tbsp. Worcestershire sauce
2 tbsp. onion
1 (3 oz.) can chopped mushrooms and broth
1 lb. ground beef

Crush cereal slightly. Set aside. In large bowl, beat egg until foamy. Add cereal, salt, pepper, Worcestershire sauce, onion, mushrooms, and broth. Beat well. Add ground beef; mix only until combined. Shape into 6 patties, about 3/4 inch thick. Place in well greased or foil-lined shallow baking pan.
Bake in 375 degree oven about 25 minutes for medium doneness. Shorten or lengthen cooking time according to preference. Serve on toasted buns or as burger-steaks.

PINEAPPLE BURGERS

1 lb. ground beef
1 tsp. salt
4 canned pineapple slices, drained
4 tbsp. brown sugar
4 tbsp. catsup
4 tsp. mustard

Shape meat into 8 thin patties. Sprinkle with salt. Put 1 slice of pineapple on each of 4 patties. Top with remaining 4 patties and seal edges. Put burgers on broiler pan rack. Broil with tops 4" from heat until brown, 3 to 5 minutes.
Mix brown sugar, catsup and mustard. Turn burgers. Spoon brown sugar mixture on burgers and broil until done, approximately 3 to 5 minutes. Very surprising and delicious taste.

BACON STUFFED BURGERS

4 slices bacon
1/4 c. onions, chopped
1 (4 oz.) can mushroom pieces, drained & diced
1 lb. lean ground beef
1 lb. pork sausage
1/4 c. grated Parmesan cheese
1/2 tsp. pepper
1/2 tsp. garlic powder
2 tbsp. steak sauce
8 hamburger buns
Lettuce

Cook bacon until crisp. Drain all but 2 tablespoons drippings and saute onions in drippings. Crumble bacon and add with mushrooms to skillet. Crumble bacon, add with mushrooms to skillet. Set aside. Combine beef, pork, cheese, pepper, garlic powder and steak sauce in a large bowl. Shape into 16 patties. Divide bacon mixture and place over eight of the patties. Place remaining patties on top and press edges tightly to seal. Grill over medium coals until well done. Serve on buns, with lettuce, if desired.

GARDEN - FRESH TURKEY BURGERS

1 lb. ground turkey
1 c. Quaker Oats (quick or old fashioned, uncooked)
3/4 c. finely chopped onion
3/4 c. finely chopped red or green pepper
1/2 c. shredded zucchini
1/4 c. catsup
6 whole grain rolls, split, toasted
1/2 c. sour half and half

Lightly spray rack of broiler pan with vegetable oil cooking spray or oil cooking spray or oil lightly. Combine first seven ingredients; mix well. Shape into six burgers. Place on rack of prepared pan or over medium hot coals on outdoor grill 6 inches from heat. Broil 7 to 9 minute son each side or until golden brown. Serve on rolls with rounded tablespoon sour half and half per serving. Garnish with lettuce and sliced tomato, if desired.

Cranberry and Apple Stuffed Pork Chops

1 tablespoon olive oil
1/2 onion, chopped
1 large Granny Smith apple - peeled, cored and diced
2 tablespoons balsamic vinegar
1/2 cup dried cranberries
salt and pepper to taste
2 (6 ounce) boneless pork chops
1 tablespoon olive oil

Heat 1 tablespoon olive oil in a skillet over medium heat. Stir in the onion and apple; cook and stir for 5 minutes. Stir in the cranberries and balsamic vinegar, and continue cooking until the apple and onions have softened, about 5 minutes more. Season to taste with salt and pepper, then scrape the mixture onto a plate, and refrigerate until cold.

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a small baking dish.

Cut a large pocket into the pork chops using a sharp, thin bladed knife. Stuff the cooled apple mixture into the pork chops, and secure with toothpicks if needed. Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Season the pork chops with salt and pepper to taste, and place into the hot skillet. Cook on each side until browned, about 3 minutes, then transfer to a baking dish. Top with the remaining apple mixture, and cover the baking dish with aluminum foil.

Bake in preheated oven until the pork is no longer pink in the center, about 40 minutes depending on the thickness of the pork chops. Uncover, and bake about 10 minutes longer until the apple mixture has browned around the edges.

Old-Fashioned Pink Lemonade

Hawaiian Fried Won Tons

1 (12 ounce) container fully cooked luncheon
meat (e.g. Spam), chopped
1 (8 ounce) can water chestnuts, drained
and chopped
3 tablespoons green onions, chopped
3 tablespoons fresh parsley, chopped
3 hard-cooked eggs, peeled and chopped
1/2 teaspoon pepper
1 1/2 tablespoons oyster sauce
1 (14 ounce) package square wonton
wrappers
1 quart vegetable oil for frying

In a medium bowl, mix together the lunch meat, water chestnuts, green onions, parsley, hard-cooked eggs, pepper, and oyster sauce. Set aside.
On a clean flat surface, such as a cutting board, lay out 4 to 6 wonton skins at a time. Place a tablespoon of the meat mixture into the center of each one. Keep a small bowl of water next to the work area to dip fingers in. Use wet fingers to moisten the corners of each wrapper. Quickly pinch all 4 corners together to seal in the filling. If it doesn't hold, use more water. Keep filled wontons covered with plastic wrap to prevent drying while the others are made.
Heat one inch of oil in a deep heavy skillet over medium-high heat, or heat recommended amount of oil in a deep-fryer to 365 degrees F. Fry wontons for a few minutes on each side, or until golden. Remove to paper towels to absorb excess grease. Enjoy the grinds!

Malasadas

1 (.25 ounce) package active dry yeast
1 teaspoon white sugar
1/4 cup warm water (110 degrees F/45
degrees C)
6 eggs
6 cups all-purpose flour
1/2 cup white sugar
1/4 cup butter, melted
1 cup evaporated milk
1 cup water
1 teaspoon salt
2 quarts vegetable oil for frying
2 cups white sugar

Dissolve yeast and 1 teaspoon sugar in 1/4 cup warm water; set aside.
In small bowl, beat eggs until thick.
Put flour in large bowl, making a well in the center. Into the well add yeast, eggs, 1/2 cup sugar, melted butter, milk, 1 cup water, and salt. Beat thoroughly to form a soft, smooth dough. Cover, let dough rise until doubled.
Heat oil to 375 degrees F. Drop dough by big teaspoonfuls into oil, fry until golden brown. Drain on paper towels, shake in a bag of sugar to coat, and serve hot.

Chewy Coconut Cookies

1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
1/2 cup packed brown sugar
1/2 cup white sugar
1 egg
1/2 teaspoon vanilla extract
1 1/3 cups flaked coconut

Preheat oven to 350 degrees F. Combine the flour, baking soda, and salt; set aside.
In a medium bowl, cream the butter, brown sugar, and white sugar until smooth. Beat in the egg and vanilla until light and fluffy. Gradually blend in the flour mixture, then mix in the coconut. Drop dough by teaspoonfuls onto an ungreased cookie sheet. Cookies should be about 3 inches apart.
Bake for 8 to 10 minutes in the preheated oven, or until lightly toasted. Cool on wire racks.

Coconut (Haupia) and Chocolate Pie

1 (9 inch) unbaked pie crust
1 cup milk
1 (14 ounce) can coconut milk
1 cup white sugar
1 cup water
1/2 cup cornstarch
7/8 cup semi-sweet chocolate chips
1 1/2 cups heavy cream
1/4 cup white sugar

Preheat oven to 350 degrees F. Bake crust for 15 minutes, or until golden brown. Set aside to cool.
In a medium saucepan, whisk together milk, coconut milk and 1 cup sugar. In a separate bowl, dissolve the cornstarch in water. Bring coconut mixture to a boil. Reduce to simmer and slowly whisk in the cornstarch. Continue stirring mixture over low heat until thickened, about 3 minutes.
In a glass bowl, microwave chocolate chips for 1 minute or until melted. Divide the coconut pudding evenly into two bowls. Mix chocolate into one portion. Spread on the bottom of the pie crust. Pour the remaining portion of pudding on top of the chocolate and spread smooth. Refrigerate for about an hour.
Whip cream with 1/4 cup sugar until stiff peaks form. Layer the cream on pie; if desired garnish with chocolate shavings.

Piña Passion

•1 ounce lime juice
•3/4 ounce passion fruit nectar
•1/2 ounce peach brandy
•3/4 ounce Demerara rum (86 proof)*
•3/4 ounce gold rum
•1 pineapple slice, canned
•3/4 ounce honey
•medium size pineapple

Pour the first seven ingredients into a blender along with 1/2 cup of crushed
ice. Blend all items.
Pour mixture over ice cubes placed in a cored out pineapple or over ice in a
glass.
*Demerara Rum is a blend of mature rums from Guyana, the only country in the
world legally entitled to call its rum Demerara. Before blending, each rum is
aged in oak casks to bring out its full character and flavor. The rums are then
carefully blended to produce a fine Demerara rum of particular smoothness and
quality

Hawaiian Fruit Punch

•4 cups orange juice
•4 cups guava juice
•4 cups pineapple juice
•1/2 cup grenadine, red
•1 cup ginger ale
•3 cups light rum
•1/2 cup dark rum

Compliments of Culinary Arts Program at Maui Community College.

Pour chilled juices into a large bowl, add grenadine, ginger ale and the light
rum.
Add cubed ice and stir to mix.
Float dark rum over the punch. Do not stir into the punch.

Pineapple Iced Tea

•6 tea bags
•1/2 cup sugar
•4 cups boiling water
•fresh mint
•juice of 3 lemons
•5 tablespoons pineapple juice

Place tea bags and sugar in a 2-quart pitcher.
Add 4 cups of boiling water.
Steep for 15 minutes.
Remove tea bags.
Steep fresh mint leaves in tea for at least 3 minutes.
Remove mint leaves.
Add lemon and pineapple juices.
Fill the pitcher with cold water.
Serve over ice.
Garnish with pineapple and fresh mint leaves.

Lolo's Knock Out Punch

1 Can (6 oz.) Frozen Pineapple Juice
1/2 C. Lemon Juice

1 Bottle (4/5 qt) Claret

Six steps to follow:
1) Reconstitute pineapple juice according to the directions on the can.
2) Add lemon juice and sugar.

Lava Flow

•1 oz. light rum
•1 oz. Malibu® coconut rum
•2 oz. fresh or frozen strawberries
•1 small banana
•2 oz. unsweetened pineapple juice
•2 oz. coconut cream

Blend the 2 rums and the strawberries in a blender to form a smooth paste. Pour
this mixture into a tall (Collins or Hurricane) glass. Rinse the blender. Blend
the banana, the coconut cream, and the pineapple juice in blender with crushed
ice until smooth. Pour this mixture into the glass with the rums very slowly and
watch as the strawberry mixture oozes its way to the top along the sides of the
glass creating the flowing lava effect. Garnish with a pineapple wedge and paper
umbrella.

Waikiki Champagne Punch

•1.5 qt. fresh pineapple juice
•2 - 750 ml bottles of dry or semi-dry champagne, chilled
•3 cups of pineapple chucks in juice
•1 lemon sliced
•1 lime sliced
•2 - 3 oranges sliced
•2 cups strawberries
•ice cubes as needed

Combine all ingredients in a punch bowl or large stew pot. Add ice cubes. You
can garnish the punch with pieces of any of the fruits used in the punch.

More or less champagne can be used depending on the party. Pink champagne can
also be used.

Caramel Corn Party Mix

4 cups popped popcorn
2 cups bite-size wheat or bran square cereal
1 1/2 cups small pretzels or pretzel sticks
1 1/2 cups pecan halves
3/4 cup packed brown sugar
6 tablespoons butter (no substitutes)
3 tablespoons light-color corn syrup
1 teaspoon pumpkin pie spice
1/4 teaspoon baking soda
1/4 teaspoon vanilla
1/8 teaspoon ground red pepper

1. Heat oven to 300 degree F. Remove all unpopped kernels from popped popcorn. Combine popcorn, cereal, pretzels, and pecans in a 17x12x2-inch baking or roasting pan.

2. Mix brown sugar, butter, and corn syrup in a medium saucepan. Cook and stir with a wooden spoon over medium heat until mixture boils. Reduce heat to medium-low. Cook without stirring for 5 minutes more.

3. Remove pan from heat. Stir in pumpkin pie spice, baking soda, vanilla, and red pepper. Pour over popcorn mixture in pan, gently stirring to coat. Bake for 15 minutes. Stir mixture; bake 5 minutes more. Spread caramel corn mixture on a large piece of buttered foil to cool. Break into pieces. Store tightly covered up to 1 week. Makes about 8 cups.

Angel Fudge

2 cups sugar
1 cup milk
1 cup Hershey's syrup
1 tbsp butter
1 tsp vanilla
3/4 cup marshmallow crème

Butter 8 inch square pan. In heavy 3 quart saucepan, combine sugar, milk and syrup. cook over medium heat, stirring constantly until well blended. Continue to cook without stirring to 234 degrees or until syrup, when dropped into very cold wave, forms a soft ball which flattens when removed from water. [Bulb of candy thermometer should not rest on bottom of saucepan.] Remove from heat. Add butter, vanilla and marshmallow crème. Do not stir. Cool at room temperature to 110 deg [lukewarm]. Beat with wooden spoon until fudge loses glass [fudge will hold shape. Quickly spread into prepared pan; cool. Cut into squares.
Yield: 28 candies.

Alaska Salmon Bake with Pecan Crunch Crust 2 Tbs. Dijon mustard
2 Tbs. unsalted butter, melted
1 Tbs. plus 1 tsp. honey
1/4 cup breadcrumbs
1/4 cup pecans or walnuts, finely chopped 2 tsp. parsley, chopped
4 salmon fillets, thawed if frozen, 6 ounces each 1 lemon, cut into
wedges
Preheat oven to 450°F. Mix first 3 ingredients in a bowl and set
aside. Mix breadcrumbs, pecans and parsley in another bowl. Season
salmon with salt and pepper to taste and place on a lightly greased
baking sheet or broiling pan. Brush each fillet with mustard-honey
mixture and top with a spoonful of breadcrumb mixture. Bake 10 mins per
inch of thickness or until salmon flakes when tested with a fork. Serve
with lemon wedges. Per serving: cal 521, fat 21.5g, 38% cals from fat,
chol 181mg, protein 65.4g, carbs 14.9g, fiber 1.6g, sugar 7.0g, sod

7 Layer BBQ Bacon Dip

2 pkg. (8 oz. each) Cream Cheese, softened
1/2 cup Barbecue Sauce
1 pkg. (2.8 oz.) Real Bacon Recipe Pieces
1 small tomato, chopped
1/2 cup diced green pepper
1/3 cup sliced green onions
1-1/2 cups Shredded Cheddar Cheese

Spread cream cheese on 12-inch platter or pizza pan; top with barbecue sauce. Sprinkle with bacon pieces, tomato, green pepper, onions and cheddar cheese. Serve with scoop-shaped corn chips or tortilla chips.

YIELD: 20 Servings

CLASSIC ANGEL FOOD CAKE

1 cup cake flour
1 1/4 cups sugar
1/4 tsp salt
10 large egg whites
1 tsp cream of tartar
2 tsp vanilla

Heat oven to 350 degrees. 10" tube pan with removable bottom. Line bottom with foil, cutting to fit around the tube, place back into pan. Whisk together flour, 1/4 cup sugar and salt, transfer mixture to a sieve over a small bowl. In large bowl, beat egg whites until frothy and blended. Add the cream of tartar and beat until soft peaks start to form, add the remaining sugar continue to beat until whites are very thick and hold firm peaks. Beat in the vanilla.

Transfer mixture to a large bowl. Sift 1/3 of the flour mixture over whites, fold in. Repeat twice with the remaining flour, folding in until incorporated. Scrape batter into pan and spread evenly. Bake 35 min. or until done. Immediately, invert the pan. Cool completely, upside down. TO LOOSEN CAKE---run a knife around all sides of pan. Lift cake out of pan by tube. Loosen cake from bottom, invert to unmold, then serve. GOES GOOD WITH SLICED STRAWBERRIES AND WHIPPED CREAM, IF DESIRED. Makes 12 servings..

Cherries Jubilee Cheesecake Bars

1 box Betty Crocker® SuperMoist®
cherry chip cake mix
1/2 cup margarine, butter or spread,* softened
2 (8 ounce) packages cream cheese, softened
1 tub Betty Crocker Rich & Creamy cherry
ready-to-spread frosting
3 eggs

Preheat oven to 325 degrees F.Beat dry cake mix and margarine in large bowl on low speed until crumbly; reserve 1 cup. Press remaining crumbly mixture in bottom of ungreased 13 x 9-inch baking pan.Beat cream cheese and frosting in same bowl on medium speed until smooth. Beat in eggs until blended. Pour over crust; sprinkle with reserved crumbly mixture.Bake about 45 minutes or until set; cool completely. Cover and refrigerate at least 2 hours. For bars, cut into 6 rows by 6 rows. Store covered in refrigerator.
Makes 36 bars.
*If using spread, use only stick that has more than 65% vegetable oil.
